Menu Monday – December 2, 2013
Heather is hosting the Gluten Free Menu Swap over at Celiac Family this week. The theme is “Cookies and Baked Goodies.” Cookies and quick breads are the big items I usually bake for Christmas with my family. We like Apple Cardamom Biscotti, Candy Cane Cookies, Basic Cut-Out Sugar Cookie, Dark Chocolate Walnut Ginger Biscotti, Ginger Snap Biscotti, Ginger Snap Cookies, Jam Filled Thumbprints, Lemon Shortbread Cookies, Peanut Butter Blossom Cookies, Pecan Pie Bars, Snickerdoodles, Spritz, Russian Tea Cakes, Shortbread Cookies, Jam Filled Thumbprints, Lemon Shortbread Cookies, Peanut Butter Blossom Cookies, and Pecan Pie Bars. Yum! Other treats we like are Cranberry Upside-down Cake, Hot Chocolate Cupcakes, Pumpkin Streusel Bars, Texas Sheet Cake, Almond Bark, Chocolate Truffles, Rocky Road Candy, Cardamom Almond Muffins, Sugar ‘n’ Spice Nuts, Caramel, and Date Nut Bread. Freezer cooking this week: I’ll be working on my Christmas baking a bit at a time and stashing it in the freezer for the holiday. I’ll also be putting Bison and Sweet Potato Stew in the Slow Cooker and Pumpkin Waffles in the freezer for another day.

Monday: Bison and Sweet Potato Stew in the Slow Cooker with salad
For the freezer: Make one Bison and Sweet Potato Stew in the Slow Cooker for dinner and assemble one in a gallon-sized freezer bag for another day. Remove as much air as possible, seal, label and freeze.
Tuesday: Chicken Cacciatore with salad
Wednesday: Pumpkin Waffles and Homemade Turkey Sausage with fruit
For the freezer: Make a second batch of Pumpkin Waffles for freezer for breakfast. Package in a gallon sized freezer bag, with waxed paper separating the waffles. Remove as much air as possible, seal, label and freeze.
Thursday: Lazy Cabbage Roll Casserole and chunky cinnamon apple sauce
Friday: Buffalo Chicken Pizza and a salad
