Menu Plan Monday – March 7, 2016

Only one more week until my son has spring break and another 3 days later until the girls start theirs. Woo! Can’t wait to get all my kiddos home. Until then, this week is pretty low key. We’re all recovering from a bit of flu and a busy week last week. The weather is just turning more spring-like so while we’ll be having some good comfort food, we’ll be wrapping it up in lettuce wraps or tossing it into a hearty dinner salad. What do you serve up when the weather is changing?

Do you want to hear something amazing? It is only a couple more weeks until another big milestone for our family. It will be 15 years since my oldest daughter was diagnosed with celiac disease. 15 years of a new lease on health for her and all the rest of the family that has been diagnosed since then, 15 years of new friends brought together by gluten free foods, and 15 years of an amazing journey we could never have guessed back then. Time to celebrate!

Now on to this week’s menu plan! Heather of Celiac Family is hosting the Gluten Free Menu Swap this week. It’s all about salads this month. I have quite a few salads on the blog: Gingered Beef & Broccoli Salad Bowl, Papaya and Coconut Chicken Salad, Taco Salad with Avocado-Lime Dressing, Curried Chicken Salad, Green Chile Taco Salad Filling, Curried Chicken Cantaloupe and Mango Salad, Steak and Potato Salad, Fresh Apricot Thai Salad, Sesame Chicken Veggie Salad, and Deviled Egg Salad. What types of salads do you like?

 Gluten Free Dairy Free Apricot-Curry Meatballs Ginger Beef and Broccoli Salad 

 

 

 

 

Monday: Supreme Pizza and a mixed greens salad with basic vinaigrette

Tuesday: Orange Beef Lettuce Wraps with simple fried rice

Wednesday: Apricot Curried Meatballs with rice and sautéed pea pods

Thursday:  Gingered Beef and Broccoli Salad Bowl

Friday: Chicken and Spinach Strata with fruit salad

    Great to see your menu plan this week. I love all the salads! It all sounds so good. Apricot Curried Meatballs...yum! Enjoy Spring Break with the family. :)
