Gluten Free Dairy Free Cashew Cheesy Sauce

This is my family’s favorite “cheese” sauce.  Above you can see it on gluten free elbow noodles for Gluten Free Dairy Free Mac’n Cheese.  You can make this sauce ahead, cool and keep covered in the refrigerator.  Warm when you need it during the week.  When cooled you can spread it on gluten fee bread and toast in a pan for gluten free dairy free grilled “cheese”.  Yum!

Cashew Cheesy Sauce (makes 3 cups)

1 cup raw cashews

2 cups water

2 oz. or 4 oz. jar pimentos, drained (depending on color desired)

1 cup nutritional yeast flakes

2 tablespoons cornstarch

1 tablespoon lemon juice

1 1/2 teaspoons salt, or to taste

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

In a blender, blend cashews to a fine power. Add the remaining ingredients and blend until completely smooth. Transfer mixture to a medium saucepan and whisk constantly over medium heat until thickened, about 5 to 6 minutes. Serve hot.
