It is time for Menu Plan Monday and the Gluten Free Menu Swap!  This week’s swap is being hosted by Heather of Celiac Family.  She has picked tomatoes for the theme ingredient.  Yum!  I haven’t got any tomatoes in my garden yet, BUT the farmer’s market had some lovely brandywine tomatoes that I am planning on using in BLT’s this week.  It is going to be HOT this week in my area and BLT’s and tomatoes, and other garden fresh veggies are part of my plan to make meals that do not heat up the house.

I will be roasting 3 chickens in my big roaster which you might think would heat up our house.  However, I have one big roaster for turkey at Thanksgiving, which is a stand alone roaster, really like a large slow cooker.  I cat stand just using an appliance one time a year, so I also use it to roast 3 chickens at a time.  Because it is an electric roaster, I can set it up in the basement so as not to heat the house.  Yay!  After removing the cooked chicken (some for dinner, some for the freezer), I will start stock in the roaster and let that simmer overnight.  In the morning I will have stock to strain and package for the freezer.


Monday:  Roast chicken in roaster/Summer orchestra/XC practice/mommy works

Roasted Chicken, Napa Slaw and fruit salad


Tuesday:  Summer orchestra/XC practice/assemble 2 each of Chili Maple Glazed Chicken and Garlic Dijon Chicken for the freezer/little girl soccer/big girl soccer/...and it is my hubby’s and my 19 year anniversary.  🙂

Wednesday:  Summer orchestra/XC practice/mommy works

Slow Cooker Korean Tacos, kimchi, cilantro cashew salad


Thursday:  Last day of summer orchestra:  Concert tonight/XC practice/little girl soccer/mommy works/big girl soccer

Chicken, Grape and Walnut GF Pasta Salad


Friday:  XC practice

California Turkey Burgers on the grill, Tomato Basil Salad
