GF Menu Swap-Clementine

Hello! After quite a long time of a tricky tummy and low energy due to some health issues I feel like I am actually back to the blog. (Side note: if you have Celiac, be sure any medication you take is gluten free. Even after all these years I hadn’t checked up on the status of a generic variant of a med I take for my thyroid. Really, I had gotten lazy and stopped checking up on it. And, yep- it contained gluten. So… months later of low energy, severe anemia, inflammation in the small intestines and their lymph nodes, swollen joints and a bleeding ulcer later, we figured it out. Yay! Healing is taking a bit of time, and I’m still in the midst of it, but feeling SO much better and with better energy. Check your meds for gluten! That stuff is sneaky…) I have an appetite again and have enough energy to do life with my family, my job and still love up the blog. I can’t wait until my full energy is back. Watch out – LOL!

Monday: Roasted Fish with Potatoes, Tomatoes and Olives and mixed greens salad with favorite dressing

Tuesday: Slow Cooker Sweet and Sour Chicken with Cauliflower Rice and Salad

Wednesday: Veggies with Dairy-free Creamy Cashew “Cheese” Sauce on Rainbow GF Spiral Pasta (our version of Mac’n’Cheese with lots of color!) with clementines

Thursday: Ginger Beef Stir Fry over quinoa with a salad

Friday: Mexican Fiesta Avocado Stuffed Turkey Burgers with all the fixin’s

Saturday: Pizza night!  Heart shaped for Valentine’s Day. 🙂

Thanks, Heather! It’s nice to finally find food tasty sounding again and have enough energy to make it! 🙂 I am thrilled to be blogging again. I’ve missed it!

Would you mind telling us which brand of generic thyroid medicine had the gluten in it and which one you switched to? My pharmacy recently switched from Mylan levothyroxoid to Sandoz levothyroxoid, and I called Sandoz about a year ago to see what fillers they used and they said it was potato starch. I hope they didn’t change it since then!

As I actually don’t do very well on the generic (my blood levels don’t stay very steady), I am back on the regular brand. A good place to check for a quick check is As brands change so often, I highly recommend having a standing order with your pharmacy (which I have now) to double check EVERY time your prescription is filled with the company they are dispensing from. It may take an extra day or two to get the info and fill your prescriptions, but for me it is worth it. Good luck!
