GF Menu Swap-Clementine

Hello! After quite a long time of a tricky tummy and low energy due to some health issues I feel like I am actually back to the blog. (Side note: if you have Celiac, be sure any medication you take is gluten free. Even after all these years I hadn’t checked up on the status of a generic variant of a med I take for my thyroid. Really, I had gotten lazy and stopped checking up on it. And, yep- it contained gluten. So… months later of low energy, severe anemia, inflammation in the small intestines and their lymph nodes, swollen joints and a bleeding ulcer later, we figured it out. Yay! Healing is taking a bit of time, and I’m still in the midst of it, but feeling SO much better and with better energy. Check your meds for gluten! That stuff is sneaky…) I have an appetite again and have enough energy to do life with my family, my job and still love up the blog. I can’t wait until my full energy is back. Watch out – LOL!

Wednesday: Veggies with Dairy-free Creamy Cashew “Cheese” Sauce on Rainbow GF Spiral Pasta (our version of Mac’n’Cheese with lots of color!) with clementines

Thursday: Ginger Beef Stir Fry over quinoa with a salad

Friday: Mexican Fiesta Avocado Stuffed Turkey Burgers with all the fixin’s

Saturday: Pizza night!  Heart shaped for Valentine’s Day. 🙂
