Menu Plan Monday – June 20, 2011

Heather of Celiac Family is our lovely host for the Gluten Free Menu Swap this week.  She picked blueberries as the theme ingredient.  Yum!  I am so lucky because blueberries are on sale in my area (buy one, get one free), so I am loading up on them.  I am using blueberries in coconut yogurt berry breakfast parfaits and baked them into Blueberry Breakfast Cookies (those will be posting tomorrow).  I’ll be tossing blueberries on our salads this week, like the Chicken Blueberry Mango Salad we are eating on Tuesday.  I have my eye on a couple of blueberry bushes at my local garden center.  They are marking down plants, so I am hoping to grab them for a good deal this weekend before they are gone.  I would love to have blueberries in my own yard.  Wish me luck!

Monday: Summer Orchestra/Soccer Team Pictures/Big boy sailing with the Boy Scouts 

Chicken Thai Pizza (recipe will be posted on Friday) and mixed greens salad

 

Tuesday: Summer Orchestra/Little Girl Soccer/Big Girl Soccer Practice/Summer Piano/Big boy sailing with the Boy Scouts

Chicken Blueberry Mango Salad with Poppy Seed Dressing

 

Wednesday:  Summer Orchestra/Big boy sailing with the Boy Scouts

Salmon & Sweet Potato Cakes with red cabbage slaw


Thursday: Summer Orchestra/Little Girl Soccer/Big Girl Soccer/Big boy sailing with the Boy Scouts

BLT Salad with Thousand Island Dressing and GF Garlic French Bread

 

Friday:

Spinach Burgers, cucumber salad, strawberries and GF Almond Pound Cake

growing blueberries is fun…but don’t park under nearby trees. then the birds get your berries, and you get them…uh…back….in the form of blue and purple poo.
