Heather of Celiac Family is our lovely host for the Gluten Free Menu Swap this week. She picked blueberries as the theme ingredient. Yum! I am so lucky because blueberries are on sale in my area (buy one, get one free), so I am loading up on them. I am using blueberries in coconut yogurt berry breakfast parfaits and baked them into Blueberry Breakfast Cookies (those will be posting tomorrow). I’ll be tossing blueberries on our salads this week, like the Chicken Blueberry Mango Salad we are eating on Tuesday. I have my eye on a couple of blueberry bushes at my local garden center. They are marking down plants, so I am hoping to grab them for a good deal this weekend before they are gone. I would love to have blueberries in my own yard. Wish me luck!
