Menu Plan Monday – October 24, 2011
The Gluten Free Menu Swap is being hosted by Heather of Celiac Family. The theme is “Spooky Delights.” Fun! A couple of cute, spooky things I have on the blog are Mummy and Ghost Cupcakes I made last year. Other treats I am thinking about making for my family are pumpkin whoopie pies, roasted pumpkin seeds (we always do this after we carve our pumpkins) and bite sized sweet and spicy pepita and popcorn balls. Yum!
Monday: Mommy work/Boy Scout Meeting
Spinach burgers, bok choy and cauliflower stir-fry and spiced sweet potato fries
Tuesday: Piano lessons
Roast chicken, mashed cauliflower (yes, I have a LOT of cauliflower right now!), salad
Wednesday: Make chicken stock/Mommy work/little girl dance class/youth group
Pumpkin Waffles with homemade sausage, and fruit
Thursday: Mommy work
White chicken chili with blender corn bread
Friday: Bake Pumpkin Whoopie Pies and freeze
Kid’s choice night (they will probably pick pizza of some sort)

Have you ever tried the King Arthur gluten free pancake mix? It’s amazing and my family didn’t know till I told them. They just keep commenting on the delicious pancakes. I’ve been trying to incorporate more gluten free items into our diet since my husband is Type 2 diabetic.
