Blast from the past – Pumpkin Enchilada Casserole with Chicken
Here is a photo of the yummy Gluten and Dairy Free Pumpkin Enchilada Casserole from October 2009. You can keep it vegan or add precooked chicken, if that is how you roll. You can make it with canned pumpkin or with homemade pumpkin or winter squash puree. We really enjoy serving this with a salad, such as Cilantro Cashew Salad or with Seasoned Green Beans.
