Menu Plan Monday – June 27, 2011
Wendy of Celiacs in the House is our wonderful host for this week’s Gluten Free Menu Swap. If you have a GF menu, we would love to have you join in! She has picked olives for the theme ingredient this week. She has some great link ups to yummy looking recipes including an olive relish I would love to try. Yum! I am not going to be kicking up the theme too much this week (boo-hoo! I love me some olives) because I am cleaning out the fridge and preparing food for our family camping trip to Porcupine Mountains Wilderness State Park. Two of my favorite recipes that use olives are Mediterranean Chicken and Moroccan Chicken Tagine with Apricot Quinoa Pilaf.
Monday: Summer orchestra/CC captain’s practice/Boy Scout trip meeting/make chicken stock
Slow Cooker Chicken Tacos (from the freezer) and all the fixings and Cilantro Cashew Salad
Tuesday: Summer orchestra/CC captain’s practice/little girl soccer/piano lessons/big girl soccer
Salmon & Sweet Potato Cakes with red cabbage slaw (we didn’t get to it last week)
Wednesday: Summer orchestra/cc captain’s practice
Pulled pork sandwiches on homemade gf buns, salad
Thursday: have extra little cutie over for the day/Summer orchestra/CC captain’s practice/little girl soccer/piano lessons/big girl soccer
Still up in the air. Will be decided as soon as camping menu is finalized… Got to use up the extra ingredients, ya know!

Saturday: Daddy and son MinneMan Triathlon/leave for trip

Hey Wendy, I just saw your Blueberry Cookies. Those looked awsome! I just might work those into my menue this week 🙂 By the way, thanks for the tips on the ribs. They turned out really good. I can’t wait to try some of your other marinades.
