Heather of Celiac Family is hosting the Gluten Free Menu Swap this week. The theme is Eggplant. I serve eggplant quite a bit in the summer (LOVE it brushed with olive oil and garlic and grilled – just as is or as
a pizza topping) but also make Baked Eggplant Zucchini Spaghetti, Eggplant Caponata, and in ratatouille.   How do you eat eggplant?

This weekend my son will be home for his Spring Break (Yay!) so I’d like to get a few things baked and stashed in the freezer before he gets here. Also, we’re all in a bit of a tizzy over the Ultimate Pi Day coming up, so making pie crust and getting a plan set for that will also be a big focus this week. We’re total geeks here. We even have t-shirts coming. 🙂 But it’s not all sweet treat focused; I do need to restock some high-protein breakfast options. The girls are going over a list with me of what we’ll make and freeze over their Spring Break in two weeks.

Gluten & Dairy Free French Bread

Slow Cooker Pulled Italian Chicken and Kale Seasoned Green Beans

Monday: Slow Cooker Barbecue Chicken with Simple Arugula Salad

Tuesday: Baked Eggplant Zucchini Spaghetti & mixed green salad with Basic Vinaigrette

Wednesday: Southwest Sloppy Joes on baked sweet potatoes with steamed broccoli

Thursday: Salmon and Asparagus Frittata with Gluten Free French Bread and Spinach Salad

Friday: Pulled Pork Sandwiches on Gluten Free Hamburger Buns, Roasted Roasted Potatoes and Seasoned Green Beans

    I like your grilled eggplant idea! I'll have to remember that for warmer weather. I'm a wimp for grilling in 5 degree weather. :)

      LOL! When I was growing up, my dad would grill turkeys with the snow swirling around... He's kind of a nut, but, boy, those turkeys were good! :)
