Menu Plan Monday – June 4, 2012

It’s time for Menu Plan Monday and the Gluten Free Menu Swap!  Heather of Celiac Family is our wonderful host this week.  If you would like to host a week, please drop her a line and she will get you in the line up.  🙂  She has picked Sweet Bell Peppers for the theme this week.  I have a few things on the menu with sweet peppers in them, Green Chili Taco Salad, Marinated Pepper Salad, and Sausage and Peppers to name a few.  How do you like your peppers?

We are on the last week of school for the kiddos, with the last day on Thursday.  Woo-hoo!  Bring on summer vacation!  Last Tuesday all three kids played in their piano recital which was the last of the concerts for this school year (we have had one or two concerts a week for the past month).  The last thing this week is the dance recital on Saturday.  I can’t wait to see my sweetie’s ballet number.  🙂

Before we get to the menu, I’ll leave you with a chicky pic.  I am taking them outside on warm days for a little outside time.  A little chicky field trip.  Literally.  In a field.  Is that funny just to me?  Bwahahaha!  They love it!

Canning/Freezing Plan:  Rhubarb syrup, rhubarb sauce, strawberry jam, strawberry-rhubarb jam (Are you sensing a theme?  Guess what is in my yard?  LOL!).  Make and freeze Roasted Veggie Pizzas, roast 3 chickens (freeze meat into dinner sized portions and to use as lunch meat, make and freeze stock).

Breakfasts:  Pina Colada Smoothies, Chocolate Zucchini Muffins, Donut Muffins, “Chocolate Mocha” Shake,  Kale Egg Cups, leftovers (yes, leftovers make great breakfasts!)

Lunches:  Zucchini Fritters, Kale Egg Cups, Sandwiches – regular and wraps (GF, of course!), leftovers

Sweet Baking Love:  Besides my birthday treat (strawberry shortcake cookies), my husband’s birthday treat will be a gluten and dairy free French Silk Pie, his favorite.  We will make it for when he gets back from Ragnar Chicago.  Look for the recipe next week.

 

Monday:  Mommy works/Boy scout meeting

Green Chili Taco Salad with all the fixin’s

 

Tuesday:  Mommy’s home computer work day/Roast veggie topping and make pizzas for Friday & freeze/do a little canning and baking fun/Soccer practice (or maybe a game??)

Mediterranean Steak with Marinated Pepper Salad (no cheese, and add a few chopped kalamata olives instead), Homemade Sweet Potato Fries

 

Wednesday:  Mommy works/soccer pics

Sausage and Peppers with big mixed green and garden veggie salad with homemade French dressing and GF French Bread or GF Challah Bread

 

Thursday:  Mommy works/Last day of school!/Daddy’s birthday/Daddy gone for Ragnar Chicago/Dance recital dress rehearsal/soccer practice

Roasted Veggie Pizza, Spinach and Strawberry Salad with Homemade Poppy Seed Dressing

 

Friday:  Mommy’s birthday/Girl Scout movie night for the older troop (my daughter will bring leftover pizza and a couple of cookies for her dinner.  I’ll also send Kettle Corn for her to share.)

Chicken Empadas (done gluten free, inspired by Food for My Family – LOVE her!), Cilantro Cashew Salad, GFDF Strawberry Shortcake Cookies

    Love all the variety in your menu this week. I think I'm going to have to try the Green Chile Taco Salad. I just remembered I have some Salsa Verde in the freezer that I need to use up, and I think it will work out great with your recipe.
