Menu Plan Monday – April 4, 2011

First things first:  my little tiny baby girl is turning 8 this week.  Yep.  My baby.

Wow! That other baby sure is friendly!

Well, that was quite a while ago (but wasn’t she the smunchie-est little thing?) Now she is a big second grader with a great big heart to match.  Happy Birthday, sweetie! (And may I say, she is still smunchie!)

Today I am thrilled to be announcing that I will be writing the new gluten and dairy free freezer menu on Once a Month Mom.  I am working with Tricia of Once a Month Mom to put this together every month.  The menu features 3 breakfast recipes, 4 lunch recipes and 6 to 8 dinner recipes each month.  You will also be able to customize the recipe card and grocery lists to the number of people you are cooking for and print off labels for your freezer meals.  I am super excited about teaming up with Tricia and I am hoping this will be helpful for you as you cook for your families.  The first menu will be posted on May 1, 2011, however there will be weekly posts every Tuesday starting tomorrow.  How fun is that?

Gluten & Dairy Free Freezer cooking is coming to Once A Month Mom!

Heather of the Celiac Family is the host of the Gluten Free Menu Swap this week.  She has picked citrus for the theme this week.  Works for me, as spring is the time of year that I start craving lots of lemon recipes.  For a tasty gluten free lemon bar recipe see the March issue of the Lakewinds Natural Foods newsletter.

Monday: Boy Scout meeting/Girl Scout leader meeting

Chicken with Apricot Sauce (also from the Lakewinds March newsletter) and a salad

 

Tuesday: Piano lessons

Pork and Pineapple Kabobs, quinoa salad and salad

 

Wednesday: Dance lesson/youth group/Grandpa visits

Spinach burgers and salad

 

Thursday: little girl’s B-day!/Caddy Girl Scout meeting

Chicken Thai Pizza, spinach salad with strawberries and Marbled Cupcakes

 

Friday: NO SCHOOL/dental cleanings

Still up in the air.  We will see what grandpa is in the mood for.

    Your thinking about lemons, too! I thought I was being premature, but now I know I'm not alone. :) Those lemon bars and the Chicken with Apricot Sauce looks really tempting! The Pork and Pineapple kabobs sound great, too. Oh...it looks like another great week of eating at your house.
