This week had some carryover from last week as some of my plan just didn’t work out for the days I had them planned for.  Also, my parents had a turkey thawed so we cooked that up on Saturday.  That left some tasty stock to be made and leftover turkey.  Yum!  So that bounty will also be used in this week’s menu.  Kind of nice to have part of my menu already purchased and in the fridge and freezer!

Monday:  Wild Rice Soup (using turkey and turkey stock), Salad

For the freezer:  Turkey Stock in 4 cup portions and extra soup, ‘cause I’m making a BIG batch!

Tuesday:  Leftover Meatloaf, Mashed potatoes, Spinach Salad

Wednesday:  Roast Beef Tenderloin, Lemon and Garlic Broccoli, Salad

Thursday:  Chicken and Bok Choy Stir Fry over Rice

Friday:  Butternut Squash Stew,  Garlic Linguine with Roasted Bell Peppers.  Mixed Green Salad, Banana Nut Bread
