Menu Plan Monday – September 12, 2011
Oof… this has been quite the day for me. I have a to-do-list that is crazy long and had planned on this being my computer time day, but have had constant interruptions… And the thing is, none of them were long, or difficult or unwanted, but they have knocked me off my plan for the day. Some days are just like that… I’ll have to see how tomorrow goes for my computer work time. And really? Today was beautiful and completely distracting, so that didn’t help. Gotta love the weather at the end of summer!
I have a pretty busy week ahead of me. Quite a bit of computer work planned, an ebook to finish the final edit on, my dad is home now from his knee replacement surgery (he is doing well, but he always wants to go-go-go, so I have to keep an eye on him! He is such a stinker!), and the kiddos have all the activities in full swing starting this week. Do you know what I want to do? Putter around in the garden and knit… Woo! Wow, my motivation is not where my list is. 🙂 I think I’ll have to take little garden and knitting breaks as treats for getting things done and checked off. I know I can be bribed!
The host for the Gluten Free Menu Swap is Claire of My Gluten Free Home. She picked apples as the theme ingredient. I have an bulk freezer apple pie that I like to make every fall during apple season. I make 4 gluten & dairy free apple pies at a time, cook one that day and freeze the rest. After that, I am sitting pretty for pies during the fall, ready to pop one in the oven when needed. I also can a bunch of apple sauce, lady apples or crab apples in spiced cider, and cardamon apple butter every fall. I love cardamon and it is wonderful in apple butter!
Monday: CC practice/Boy Scout meeting
Pumpkin enchiladas casserole (with chicken) and salad
Tuesday: CC practice/Piano lessons
Leftover Beef and Butternut Stew and salad
Wednesday: CC practice (both big kids)/dance/youth group
Chicken and Broccoli Casserole and salad
Thursday: CC meet for high school/CC practice for middle school/Middle school back to school night
Apple Waffles and homemade turkey sausage with Apple-Pecan topping
Friday: CC practice
Pizza and salad
