Food Preserving – Corn Relish
This is a fun relish to make when sweet corn is at its peak! Corn Relish is amazing as a hot dog or hamburger topping or served with grilled fish. Yum!
The Recipe: Gluten Free Dairy Free Corn Relish
Ingredients
- 4 cups cooked corn, cut from cobs (about 9 ears of sweet corn)
- 2 cups chopped cabbage, about 1/2 of a small cabbage
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup sugar
- 1 tablespoon ground dry mustard
- 1/2 tablespoon celery seed
- 1/2 tablespoon mustard seed
- 1/2 tablespoon canning salt
- 1/2 tablespoon turmeric
- 2 cups vinegar, white or white wine (5% acidity)
- 1/2 cup water
Instructions
- combine all ingredients in a large pan. Bring to a boil, reduce heat and simmer for 15 to 20 minutes. Pack hot relish into hot jars. Leave 1/4" headspace. Remove air bubbles, wipe jar rims, and put on 2 piece jar lids. Process 15 minutes in a boiling-water canner (processing time is for at or below 1,000 feet above sea level)
