Gluten Free Menu Swap – February 16, 2015
Hello! How was your weekend? My son was home from college this weekend, so that was awesome! I miss my big guy when he is gone. My oldest daughter had a scrimmage meet with her robotics team and my youngest had a play date and sleepover. Busy weekend, but fun. 🙂 This week the girls have today off from school. As it is the final build and pack week for robotics, my oldest will be working on the school robot with the team so between working I think I’ll bake something up with my little peep. Sounds like a fab day to me!
This week my food plan is to work on getting more things stashed in the freezer. Over the past few months we’ve used up our stash of freezer meals, so it’s time to stock up! All the meals I have planned this week (except fish tacos) can easily be doubled and stashed in the freezer for another day. That means four meals easily stashed this week. Gotta love that!
Heather of Celiac Family is hosting the Gluten Free Menu Swap this week. The theme is Kiwi. I found out that I only have one recipe with kiwi on the blog, Kiwi Banana Smoothie, as we usually simply eat them peeled and sliced, in fruit salad or on fruit kabobs. How do you eat kiwi?
I found some fun recipes with kiwi that I want to try:
Kiwi Sorbet at The Delicious Life
Kiwi Salsa at Simply Recipes
Kiwifruit Pops at taste.com.au
Kiwi Fruit Leathers at Super Healthy Meals
Check back later today for a grocery list for this week’s menu!Â
Monday:  Chicken Wild Rice Soup and a salad
Tuesday: Meatballs and homemade sauce, gluten free pasta and a salad
Wednesday:Â White Bean & Ham Soup
Thursday: Calico Beans, Corn Bread and a salad
Friday:Â Fish Tacos and Red Cabbage Slaw
This menu plan is linked up with the Gluten Free Menu Swap and with Menu Plan Monday at Organizing Junkie.Â
So good to have your menus back for inspiration! Chicken and rice soup sounds perfect for this cold snowy day.
