(Here is my girl when she turned 6… My, how she has grown. When did that happen?)

Hello! It is definitely trying to be Spring around here. Saturday was beautiful and there are cute little green sprouts making their way bravely into the world. Woo-hoo!

This week my baby will be turning 14 years old. She has been such a joy and is growing into an amazing young woman with a big heart for others. I am so happy that she has off from school on her birthday AND I have off that day as well. We have plans to hit the shops for a few cute outfits, books and chai. Then we’ll head home and make a gluten free dairy free marble poundcake (baked up in a fantastic  dragon cake pan her big sister gave me) and homemade orange chicken with snap peas for dinner. I can’t wait!

Our menu this week is full of easy-peasy meals to get on the table. I want to get a jump on things I can pre-make and freeze for Easter, so want to focus my cooking energy toward that this week.

Monday: ground beef and veggie skillet meal

Tuesday: Lemon Chicken and asparagus

Wednesday: Spring Pasta Sauce with chicken sausages over gluten free pasta

Thursday: Slow Cooker Pulled Pork over sweet potatoes and salad

Friday: Birthday fun! Orange Chicken with snap peas over rice. Marble pound cake with whipped coconut topping and chocolate sauce
