Menu Plan Monday…?

My family is in the Outer Banks and Williamsburg this week, so that means Menu Plan Monday isn’t so much of a plan!  I brought all the extra veggies and fruit in the house, baked some cookie bars, banana muffins and bread, packed some gluten free snacks (WAY more then we normally have.  Vacations seem to bring the snackers out in us) and called it good.  Fortunately the condo we are in has a kitchen.  I brought one skillet (they have all non-stick and I can’t risk the cross-contamination) and heavy duty foil to line any baking pans I use.  I decided we were mainly eating salad, local meats and roasted veggies if needed.   Much easier, and not much to plan.  Hey, it’s a vacation.  Easy food is the plan because I want it to be a vacation for me, too!  🙂

 

So far (Sunday) we had brats (a type not in our area that were gf and didn’t have msg and corn syrup – score!) and tonight it is locally caught flounder.  Tuesday I will probably broil up some chicken to top salad so we can use up the salad in the fridge.  Then, we will see what we do…

    My family visited the Outer Banks numerous times as a child. We did lots of camping on Ocracoke Island. Lots of boogie boarding. :) We also made it up to Colonial Williamsburg once. I thought it was cool, although I always loved history. Sounds like a great vacation!
