Almost 10 p.m., but that’s okay!  I made Menu Plan MONDAY!  Having the plan in my computer, but not on my blog doesn’t really help anyone else out, does it?

This morning I had my day all planned out, including a lovely 2 1/2 hours of preschool for my little one which meant a lovely 2 1/2 hours for me.  Sigh…what would I do with myself?  Then, as I sat down to the computer, low and behold, there was my calendar flashing that it was MY week for volunteering in the school library.  Oh.  Yeah.  Oops.  Maybe I should have checked my calendar LAST NIGHT or RIGHT AWAY this morning.  Um, yeah, that’s what I’m always telling the kids…

That also threw off my grocery shopping plan for the day, but the girls and I did manage to get that in tonight when big brother was at Boy Scouts.  I saved $77. 13!!  Woo-hoo!  Gotta love those buy-one-get-one-free or buy-one-get-two-free deals.  Okay, maybe I should get out more.

We do have one repeat from last week, the Roasted Fish with Potatoes, Tomatoes and Olives.  It never happened last week, but tonight it was just what I needed with a big o’ salad with honey mustard dressing.  Yum, yum.

Wednesday: Veggies with Dairy-free Creamy Sauce on Rainbow GF Spiral Pasta (our version of Mac’n’Cheese with lots of color!)

Thursday:  Roasted Butternut Squash Soup with Salad and Garlic Bread

Friday:  Mexi Turkey Burgers with all the fixin’s

Saturday:  Pizza night!  I am not sure what kind, maybe “make-your-own”.
