Menu Plan Monday – May 7, 2012
I am off quickly this morning, but just had to get my menu up. May is a really busy month at my house and menu planning helps keep food on the table (or the cooler) depending on where our week takes us. Wendy of Celiacs in the House is our lovely host this week for the Gluten Free Menu Swap. She has picked mushrooms as this week’s theme. We love mushrooms around here and one delicious way to have them is in Twice Baked Spinach Mushroom Garlic Stuffed Potatoes. Wendy is participating in the 10 Days of Gluten Free! How cool is that? Monday: mom works/track practice/Jazz band concert
with veggies I have laying around (gotta clean out some of the veggies in my fridge!)
Tuesday: Mom works as a sub lunch lady (I totally rock a hairnet- LOL!)/Jazz band/chamber orchestra/newspaper club/track practice/piano lessons (Need portable dinner)/soccer practice
GF Wrap sandwiches fruit and veggie sticks with gfdf ranch dip
Wednesday: Mom works/Symphony orchestra/track practice/dance lesson/youth group
Slow Cooker Turkey Meatloaf and salad
Thursday: Mom works/Jazz band/track practice/middle school mentorship program/soccer practice
Mushroom kale and roasted pepper frittata, salad
Friday: track practice
Pizza (the kind is yet to be determined) with salad
