Gluten Free Dairy Free Hot Chocolate Cupcake

Hope you all had a great weekend!  We were lucky enough to have a nice four day weekend to enjoy and I had time to bake up some more Hot Chocolate Cupcakes to get a photo for you all.  Mmmm….

This week will be the part four of the gluten and dairy free Girl Scout cookie makeover.  If you miss Girl Scout cookies, bake up a batch of gluten and dairy free versions of Do-si-dos,Thin Mints and Trefoils.  They freeze just as well as the gluten versions.  And don’t forget to email the Girl Scouts of America and let them know you would like to see an allergen free/gluten free cookie on their sales sheet.

I am currently on the quest for the perfect gluten free biscuit.  Not a drop biscuit, mind you, the cut out kind.  Tall and flaky.  I like the one I make pretty much, but I just know that there must be an even better one out there.  So, I’ll be all biscuits all the time here for the next few weeks as I work through my cookbooks trying the different ones.  I’ll let you know how they all work out, but I have a favor to ask.  If any one out there has a great gluten free or gluten and dairy free biscuit recipe, can you let me know where to find the recipe?  Thanks!  I know, finding the best biscuit is a tough job but someone has to do it!  ;o)

Monday: Play practice/dance class/Boy Scouts

Roast chicken and salad (roast 2 chickens, freeze extra meat and make stock)

Tuesday: Piano lessons (need portable dinner)

Coconut-Spiked Pork with Quinoa and Peanuts from The Complete Whole Grains Cookbook by Judith Finlayson


Wednesday: mommy help in 2nd grade class/dance class/youth group

California turkey burgers, potatoes with roasted peppers and onions, salad

Thursday: Caddy Girl Scout meeting

Beef Stew Casserole topped with biscuits made from The Gluten-Free Kitchen by Roben Ryberg


Friday: mommy volunteers in school library

Pizza (pepperoni and chicken Thai) and salad
