I seem to be in a pumpkin kick.  Must be the season!  This is obviously a treat and not a meal, but it makes a nice change of pace.  I don’t live on freezer chicken alone!  


Pumpkin Pie Popsicles


1 can pureed pumpkin or squash (or 1 3/4 cup)

1/3 cup maple syrup

2/3 cup coconut milk (not the light)

1/2 teaspoon pumpkin pie spice


Blend all ingredients in a blender.  Fill popsicle molds and freeze until solid.  


If you would like a more “ice cream” texture, you can put the mixture into an ice cream machine, run the machine and then fill the molds with the soft-serve textured pumpkin mix.  Freeze until solid.
