Stone Fruit Salad-Honey-Lime, gluten free, dairy free

 

The stone fruit is amazing and, oh, so fresh right now. Peaches, plumbs, cherries… YUM! This salad is a different twist on the usual fruit salad using only lovely stone fruits. Simply dressed in honey and lime, the salad is the perfect side on a hot summer day or a cool, sweet treat on a summer evening.

The Recipe: Stone Fruit Salad

When cherries are on sale, I toss about 1 cup of pitted sliced-in-half cherries. Yum!

Ingredients

  • 2 peaches
  • 3 red or black plums
  • 3 nectarines
  • Juice of 1 lime
  • 1 tablespoon honey, or to taste
  • 3 tablespoon minced mint, optional

Instructions 

  • Remove pits from the fruit and slice. Place in a bowl.
  • Stir together lime juice, honey and mint, if using. Drizzle honey mixture over fruit and mix.
