Menu Plan Monday

The weather is heating up and I have a hankering for the garden (my lovely weed patch) so it’s all low prep meals this week.  Not super exciting, and lots of salad.  I LIKE salad and my kids will eat it, so lucky me.  The  best thing is that I am going to try a tasty sounding lentil dish that was shared on Menu Plan Monday a couple of weeks ago.  Yummy!  I will post the link on Wednesday so everyone else will get to share too!

I will post the croutons recipe later tonight, but I just had to get this post up this morning as I got it up so late last week!  I can’t wait to check out everyone’s entries!

Printable grocery list for this week’s dinners.

Monday:  salad with grilled chicken and homemade GFCF croutons

Tuesday:  Spaghetti with tomato sauce (from the freezer)

Wednesday: Lentils and rice with a big salad

Thursday:  Something delicious in the crock pot for the family (I will let them pick – they are leaning toward Calico Beans)

Friday:  Taco salad (gluten and dairy free style!  Using cooked ground beef or turkey, homemade taco seasoning, romaine, GF tortilla chips, black olives, salsa, chopped tomatoes, and guacamole.)

I had a question on GFCF.  It means Gluten Free Casein Free, or no gluten and dairy for us.  If I put GFCF down, but your family doesn’t need it, just use a regular bread or soy sauce or whatever.  I hope that helps!

I think I am gluten free myself since I am on a low carb diet.  Pretty nice for people to see that it’s not too hard to do.  😉 Jenn
