This week I am hosting the Gluten Free Menu Swap.  The theme is eggplants.  My favorite ways to serve eggplant is in babaganoush, ratatouille, dairy free egg plant “parmesan”, and grilled after being brushed with olive oil (super yummy on pizza).  How do you serve eggplant?

 

Monday:  Labor day/bake banana bread and muffins/base ball game/slow cook chicken for freezer

Southwestern Spagetti Pie and a salad

 

Tuesday:  First day of school for the little peep/bake scones (freeze most, save some for snacks)

Pizza with grilled eggplant, pickled roast peppers and wilted spinach salad

 

Wednesday:  First day of school for the big peeps/first day of dance class

Beef stir fry over quinoa

 

Thursday:  bake pumpkin cinnamon rolls (freeze most, save some for after school snack)

Shredded Chicken, tomato and guacamole melt sandwiches, salad

 

Friday:

Gluten & Dairy free eggplant “parmesan” and salad

 

What is on everyone else’s plate this week:

Angela of the Testosterone Palace just stopped by for the eggplant because she has a ton in her garden right now (I am so jealous!).  She made moussaka yesterday, which is a classic dish I totally forgot about.  Mmmm…  Yum!  I may need to figure out a dairy free version soon.  Thank for the idea!

Heather at Celiac Family doesn’t usually rock the eggplant, so is looking forward to some good eggplant ideas from us all.   This week her kids start school, so she is serving up  (after steaks for Labor Day) California chicken with corn and black bean salad, homemade pizza, GF egg roles and fried rice (I might need to go over for dinner that night! Yum!), hamburgers and quiche.  Wow!  Sounds great, Heather!

Cheryl of Gluten Free Goodness hates eggplant, so none will be on her menu this week.  🙂  However, she does have a lot of other amazing seasonal veggies in her menu of baked chicken with fresh herbs and garlic roasted cauliflower (you have to check the recipe for that one- Yum!), simply yum quinoa, salmon on a bed of baby greens with herbs, and curried collards.

Amanda of  Gluten Free Detroit also has back to school activities this week and a birthday to celebrate.  She was the wonderful test cook for my OAMM menu for September.   I so appreciate the cooking she did to make sure things were ready to go for the menu.  🙂  On her menu this week is make-your-own pizza, meatloaf and mashed, fajitas with rice and beans, pork tender loin with spice rub, and crock pot Thai chicken (love that one!) & rice.

Claire from My Gluten Free Home joins us after a crazy, stressful week with another to come.  I am hoping this one is so much smoother for her…  On her menu is hot dogs and cheesy grits with fruit salad, roast beef, grilled pork chops, BBQ beef sandwiches (love the planned-overs!  So smart!), and pizza.

Emily of Our Frugal Happy Life joins us with a back-to-school menu that still holds on to summer- there is plenty of grilling going on!  Lucky!  This week she is serving grilled meat with corn on the cob and potatoes, brats with taters and veggies, carnitas (yum!) with salad, BBQ chicken sandwiches, homemade gf pizza, and grilling and more grilling.  Mmmm…  Wisconsin isn’t too far.  I may have to pack my fork and head over!  🙂
