Ingredients
2lbs.flank steak or pot roastfat removed and sliced into strips
2large onionsliced into strips
1large green bell peppersliced into strips
1large red bell peppersliced into strips
1jalapeno peppersliced into strips (skip if too spicy for your family)
2Tfresh cilantro
3cloved garlicminced
3/4tchili powder
1 1/2tground cumin
1 1/2tground coriander
1/2tsalt
1 15oz.can of diced tomatoesundrained
Instructions
In crock pot combine all ingredients. Cover. Cook on low for 8-10 hours or on high 4-5 hours. Serve on gluten free tortillas with your choice of toppings. We like fresh spinach, guacamole and salsa.
