Ingredients
3tablespoonsolive oil or coconut oil
3large cooking applespeeled and sliced thinly
1/2cupbrown sugar
1/4cupmaple syrup
1teaspoonground cinnamon
1loaf of gluten & dairy free bread or French breadI like using mine: https://angelaskitchen.com/2007/06/14/gluten-and-dairy-free-french-bread/, cut into about ¾” cubes, about 8 cups
6large eggs
1¾cupsdairy free milk substituteI like almond milk
½cupcanned coconut milk
¼cupmaple syrup
1½tablespoonsgluten free vanilla
1teaspoonground cinnamon
¼teaspoonground nutmeg
¼teaspoonsalt
Instructions
Heat the oil in a skillet over medium-high heat. Add apples. Stir-fry apple slices, cooking for about 4 minutes. Add brown sugar, first measure of maple syrup and first measure of cinnamon to skillet. Continue to cook and stir for another 10 minutes until apples are tender.
Oil 9×13″ pan. Evenly spread apples into pan. Put gluten free bread cubes on top of apples in pan.
Blend eggs, milk substitute, coconut milk, second measure of maple syrup, vanilla, second measure of cinnamon, nutmeg, and salt until smooth and well incorporated. Carefully pour egg mixture over bread cubes. Cover pan with plastic wrap and place in the refrigerator overnight.
When ready to bake, preheat oven to 350 degrees F. Take plastic wrap off pan, and bake French toast casserole 45-50 minutes, until golden and egg is set.
Allow to set for 10 minutes. Run a knife around the edge of pan. Set a platter onto of the pan and carefully flip over so that apple side is up.
