1/3cupherbed red wine marinade from herb marinated mixed pickled olives
1/4cupolive oil
1/2tablespoonfreshly ground black pepperor to taste depending on the olive marinade
1medium sweet onionpeeled and chopped
1medium red bell pepperseeded and chopped
1medium orange bell pepper. seeded and chopped
1medium yellow bell pepperseeded and chopped
2small cucumbers or zucchiniI used zucchini, sliced
1cuppitted herb marinated mixed variety pickled oliveschopped coarsely
1/2cupcherry or grape tomatoessliced in half
Instructions
Mix together all the vegetables and olives. Whisk together the herbed red wine vinegar brine from the olives and olive oil. Toss vegetables with mixture. Season with cracked pepper.
Allow salad to chill, covered, in refrigerator for at least 30 minutes before serving. Stir before serving.
