Welcome back for another menu plan from Angela’s Kitchen!  I am so glad to have you!  🙂  Pull up a chair and let’s get started.

 

My kids are done with Spring Break and heading back to school this week.  Though this year it should have been called Winter Break – Part 2!  It is crazy that it snowed twice during break this year.  It does look like we will be getting some warmer weather in time for Easter, though, thank goodness.  I am crossing my finger and toes that the snow will be melted so we can do an Easter egg hunt.  Wish me luck!

On a sad note, we had our first chicken tragedy this weekend.  Agnes, our Buff Orpington (and my youngest daughter’s favorite chicken), died.  We are not sure why, but found her when we went to open the coop Saturday morning.  We’ll miss you, Agnes.  You were a sweet chicken…

How was your weekend?  Mine was fan-tab-u-lous!  The kiddos had another Friday off (what is with all the weird days off, anyway) so that meant another three day weekend at our house.  On Friday morning my oldest went up north with the high school orchestra for a weekend retreat.  A trip like that usually requires extensive planning and my daughter hauling along a cooler with her sleeping bag and pack, but this year we got to skip that.  All she needed to bring was some dessert items.  The kitchen where they stayed were set up for gluten free and dairy free options.  So amazing!  It was very strange to be able to send her off with just a few cookies and a bag of gluten free pretzels to share with the other gluten free kids in the group.  Really, really strange.  I was a bit worried (as you can imagine) but she came back safe and sound, having eaten well and having had a great time.

Other exciting news from the weekend?  Our chicken, Gonzo, started laying eggs!  They are a lovely blue color.  That means three of our chickens are now officially …

Blast from the past – Pineapple-Garlic Pork Chops

Here is this week’s blast from the past from August 2, 2006,  Pineapple-Garlic Pork Chops.  This delicious dinner is so easy to assemble as a freezer meal to have on hand for a quick mid-week meal, yet special enough to serve on the weekend for quests or for a quiet evening in with your family.

If anyone is interested on the egg front, we now have 3 chickens laying eggs (Yay!) so far.  So exciting!

We got our first eggs!!!

Our chickens will be 22 weeks old tomorrow and today is the day we got our very first egg.  The brown one was the first one we found and I think it came from Margo.  She was REALLY chatty when I opened their coop door and there it was!  🙂  The second I know came from Camilla as she is the only one of our chickens who will lay a white egg.  So exciting!  The first egg from a chicken is a pullet egg and is smaller than they will lay as they get older.  You can see the size difference n the photos below when compared to an egg from the store labeled as “large.”

So, we now have 5 pullets and 2 hens.  Woo-hoo!  I can’t wait to see what is in the next boxes tomorrow…  🙂

This past weekend was the Girl Scout Centennial Day of Service.  I have two Girl Scouts (and troops!) and so we helped our local service unit to rake a local park area to help prevent phosphorus from entering waterways.  We had a fun time (a little leaf jumping also happened, as you might imagine).  Afterwards we had cupcakes and hot cocoa to celebrate.  I brought a gluten and dairy free cake for those that needed it.  I was pleased we brought it because more girls and leaders needed it than just my girls and myself.  Isn’t it a fun cake?  It is decorated to celebrate Girl Scout’s 100th Birthday.

Fall is really here this week.  The leaves went from thinking about changing to showing off their spender almost overnight.  The wind has picked up (and it is chilly!) and my kids have been breaking out thin gloves and coats.  The homecoming game and dance were this past weekend- another sure sign of fall!  It is fun to see the kids dressing up and having fun.  Honestly, I do not remember every being this cute at that age!  My chickens seem to be adapting to the cooler weather also.  Every time there is a cold wind they all shift to point toward the wind so their feathers protect them from the cold.  The girls are 19 1/2 weeks old today.  And in case you are wondering, nope, no eggs yet.  It is driving me crazy!  It is like waiting for a baby to be born.  I am guessing it will happen in its own time, but boy, is it hard to wait for.  🙂

 

I think I am getting to the bitter-waiting-for-egg-laying stage, where I start to think my chickens may be free loaders.  Good thing they are so sweet!  Going out the the coop every morning and hearing their coos is such a great way to start the day especially because I get to share that with my youngest girl most days.  Our chickens Margo and Kermit are particularly friendly and always hop over to greet us and tell us the latest coop gossip.  🙂  I have been looking for signs of molt as I was reading it could happen soon with the changing weather and shortening days, however I have read conflicting things about whether we would see that happening this first year or not so I guess we will have to wait and see.  Does anyone out there have chickens?  Did they molt their first season?

You know what is fun?  Watching your kids challenge themselves, push them selves, to see them starting to find their own way an that road to adulthood.  And you know what else?  Sometimes it is hard for a mom to just let go, to let them stumble or teeter.  But like when they were learning to walk as babies, while I can be close by and offer a hand if needed, some things they need to try to go on their own…  Fortunately for me I have these two as my big kids.  They are turning out to be amazing young adults, people I want to hang out with, not just because I gave birth to them, if you know what I mean.  Oh, and in case you couldn’t tell, they both are runners for their Cross Country team.  They did NOT get that from me…

Though they both can bake up a mean brownie!  That skill they got from me. 🙂
