Make December Matter

I’ve always told anyone who told me that they’re feeling off their game or having trouble focusing on things during tough times to be kind to themselves. To allow themselves grace for the season they are in and that trying to weather storms in life is challenging, messing and stretching, and sometimes you just need to roll with things the way you need to roll with them. If that means you aren’t as tidy, or cheerful or productive as usual, that is cool. Tough seasons of life are a time to be gentle with yourself.

Having said that, I often go and do the opposite when talking to myself. Instead of reassuring myself that I’ve actually been doing pretty well over the past couple years with really difficult personal and family circumstances, I tend to make little lists for myself of all the things I haven’t been doing or taken care of… You know, things like isn’t the house supposed to be cleaner than ever now that I am in it ALL THE TIME. Hey guess what? It turns out, being in your house constantly and using it for every aspect of your life can trash the joint. Who knew? 🙂

I’ll go to bed thinking that the next day is the day I “get myself all together,” which is NOT a great set-up for the next day. It’s a goal that is so vague that I set myself up to be disappointed in what I haven’t completed instead of what I did accomplish. That cycle is just one big self-esteem trap, and it turns out I am really good at it.

One tool that I have been using to help organize myself that has been so positive in my life to get me out of that rut is Mia’s FLOW365 plan at Plan Simple. Her system has helped reframe my planning for the day to focus my time on what really matters to me, to what is truly important in my day-to-day life. I have appreciated how it works no matter what your circumstances are or where your current focus is. It helped me realize all I was showing up for, helped me plan down time to care for myself and to also find space for all the little things that has to happen day-to-day to get the pesky work and home things done as well. The biggest gift for me has been realizing that I really do have a choice to how I spend my day and it has helped make my ordinary everyday times truly matter by helping me shift my perspective. I love that she breaks goal planning into manageable chunks that can be started whenever you want and need to. That has been a lifesaver for me, especially with all the changing circumstances in these uncertain times.

Mia has a FREE 2 day retreat coming up this weekend, November 13-14, 2020 called Make December Matter. It is her gift to women “balancing it all” who want to create something different this holiday season and into the next year. She has amazing speakers lined up, a tasty menu to nourish you during the weekend, planning sheets, and times built into the day to help you recharge. I’ve been wondering for so long how to come back to the blog when I’ve been away for so long and it stalls me from writing before I even start. I’ll have to apologize AGAIN I tell myself. Then I tell myself I’ll just need to do better from here on out and this will be the day I finally get my act together, whatever that means….

To be honest, my biggest block to get back to writing here is that I have been just in survival mode for a long time. Working in a job where you stand for hours at a time with really bad knees left me with very little energy to do much of anything beyond care for my family, and we had a lot happening around here that needed my energy. I haven’t given myself the grace and kindness to realize I honestly was doing the best I could do for what I needed to do for what was most important for myself and my family during that season. It has been so important for me to finally realize this. I hope if you learn nothing else from my writing today, is that you remember to treat yourselves with the grace and kindness you would extend to others.

And so it turns out, I am finally ok with doing the best I can. This blog and my work here is a one woman show. But it is written by a woman with a family who has really needed her a bit extra for the past little a while, and I feel really good about showing up for them when it was needed. It is written by someone who has been in survival mode for a few years due to intense joint pain, but was trying to wait until I was a bit older to get those joints replaced. And I finally did! This year, after I turned the big 50, I had one knee replaced in July and one 3 weeks ago. I am finally seeing the light at the end of the tunnel in that area. Woo! But the truth is that it will be a year of PT exercises, extra naps when needed while I am healing, and generally reminding myself that this is a process and to be kind to myself and it is ok if I just do the best I can.

One thing I do promise is that I will finish answering all the emails from questions I received from the Online Nourished Festival presentation. I appreciate your patience if I have not answered you yet. I did have over 1700 people in my session and received hundreds of emails with questions. I’ve worked through a lot of them, but still have about 100 or so to go. I will get back to you as I am answering as many as I can each day for about an hour at a time. It is time dedicated to you all blocked out in my planner. 🙂 That is as long as I can currently stay at the computer with my knees still healing at this time. Thank you so much for your understanding and patience. I appreciate it more than I can express!

Gluten & Dairy Free Chocolate Peanut Butter Refrigerator Pie {FREE Attune Foods Dessert E-Book!}

If you have been following along my blog for awhile, you know I love the line of gluten free cereals from Attune Foods.  Non-GMO, whole grain, gluten free and delicious?  Yep, sign me up!  And while the cereals are wonderful in the standard  cereal bowl for my morning starter, but they are so versatile in cooking savory things, too.  I use Erewhon Crispy Brown Rice Cereal as a panko bread crumb replacement on Chicken Confetti Bites and Erewhon Cornflakes add the perfect crunch to Dairy Free Buffalo Chicken Bites.  When Attune came out with a line of cereals using some of my favorite gluten free super grains, I just had to try them.

Toss a handful of Buckwheat and Hemp Cereal on dairy free coconut yogurt, add a few blackberries, and you have an amazing breakfast.  My kids like adding dried fruit and almond milk to the Quinoa and Chia Cereal to start their day.  Though, honestly, I have to say I often just eat it straight from the box by the handful for a quick snack.  The whole grains keep me full and my tummy satisfied, and while the toasted crunch satisfies my tastebuds.  Yum!

I was thrilled to be asked to contribute a recipe using Attune’s Supergrain Cereals for their Supergrain Dessert E-Book from Attune Foods.  I use the delicious crunch of Quinoa and Chia Cereal to make the crust of this Gluten Free Dairy Free Chocolate Peanut Butter Refrigerator Pie.  If you don’t eat nuts, their are instructions in the recipe for replacing the peanut butter, and the recipe does not contain eggs.

Menu Plan Monday – November 18, 2013

Do you realize it is only 1 1/2 weeks until Thanksgiving?  Where did the year go?  Yikes!  But it is okay, we don’t have to panic.  I have a handy Thanksgiving guide I’ll be following for our meal and to make the prep easier for me.  I, for one, do not like to feel all harried on a holiday.  I like to be able to relax and enjoy my family.  That is where my guide comes in.  It contains the recipes and steps I use for a delicious gluten free dairy free Thanksgiving, with a check list, time table, and a grocery list.  I hope it helps make your holiday a relaxing and delicious one!

I’ll be hosting the Gluten Free Menu Swap this week.  Woo-hoo!  The theme is Thanksgiving Menus.  I can’t wait to see what everyone is going to be cooking up for the big day.  I love me some sweet potatoes…  Mmmm…   And pie.  Lots and lots of pie (the day after Thanksgiving is known as “Pie for Breakfast Day” in our house.)  Anyway, the easiest way to show you what we make for our big gluten free dairy free Thanksgiving is to give you the handy Thanksgiving guide that I put together.  It has the recipes we use for our feast.  Other Thanksgiving friendly deliciousness are Green Been Casserole (two ways) with Crispy Onions/Faux French’s, Veggie Tortilla Pinwheels (yummy appetizer), Celery Mashed Potatoes, Perfect Mashed Potatoes, Roasted Rosemary Potatoes, Sweet Potato Puree with Bananas and “Buttered” Pecans, Apple Cranberry Squash, Spicy Thai Pumpkin Soup, and Apple Pie.  My oldest daughter has been in charge of making the pumpkin pie since she was 7 years old and always bakes Impossible Pumpkin Pie to make our tummies happy.  Yum!  What are your family’s “Just Gotta Have It” dishes for Thanksgiving?

Freezer cooking this week:  I’ll be starting my Thanksgiving pre-prep this week by making stuffing bread from my Thanksgiving guide and gluten free pie crust.   This Friday I will also be starting my annual bake-a-thon for Thanksgiving and Christmas by baking up a double batch of Ginger Snaps.  I’ll be packaging 1/4 of the cookies for Thanksgiving, a 1/4 for Christmas and (after putting a few in the cookie jar) the rest will be stored in the freezer for gift giving.  Cookies freeze really well, up to three months if packaged properly, so I like to take care of them ahead of time.

The week’s breakfast options:  Apple Cider Muffins or Carrot Cake Pancakes, fried or scrambled eggs (I like a bit of sautéed kale and garlic in mine), and various fruits.
The week’s lunch options:  Nut or seed butter sandwiches (on banana bread or gluten free Amish Friendship Bread), Salmon & Sweet Potato Cakes, hard boiled eggs, various fruit, and veggie sticks.

Monday:  Silver Dollar Pear Pancakes, Homemade Turkey Sausage with fruit salad

For the freezer:  Make two loaves of stuffing bread from Thanksgiving guide.  Freeze one for left over turkey sandwiches on the Friday after Thanksgiving and one for stuffing.

 

Tuesday:   Ground Turkey & Veggie Tortilla Casserole (from the freezer) with a romaine salad topped with cherry tomato, roasted peppers and Dairy Free Ranch Dressing

 

Wednesday:  Cassoulet, steamed green beans and gluten free biscuits

For the freezer:  Make gluten free pie crust.   Shape into disks and freeze for when I make pies next week.

 

Thursday:  Orange Marmalade Chicken and a mixed greens salad with Poppy Seed Dressing

 

Friday:  Ultimate Beef Stroganoff (from the freezer), a spinach salad topped with pecans, pears and Basic Viniagrette.  For dessert, I’ll make a double batch of double batch of Ginger Snaps, some for dessert, the rest to freeze.

Kimberlee from The Peaceful Mom is cooking up Easy Chicken Stir-Fry with rice and Tropical Fruit Salad, Crock Pot Chili, Chili Cheese Fries (with leftover chili) with raw veggies and ranch dressing, Ham and Bean Soup, Pan Fried Pork Chops with steamed broccoli and mashed potatoes, Black Bean Burritos with Cilantro Lime Rice, and BBQ Pork with baked beans and Broccoli Slaw Salad. For breakfast she has a tasty looking Veggie Breakfast Scramble on the menu, and for lunch, Italian Chicken Salad. Yummy!

Gluten & Dairy Free Holiday Cookie Countdown – Pumpkin Whoopie Pies

On the third day of Christmas my true love gave to me…  Gluten Free Dairy Free Pumpkin Whoppies Pies with Maple Cream.  You just gotta love such a great true love, am I right?  This recipe uses my soft and spicy pumpkin cookies for the outer cake and a maple kissed marshmallow cream for the filling.

I will be making a double batch of these little beauties:  one third will be packaged and frozen for Thanksgiving, one third for Christmas, and one third for Christmas gifts.

Gluten & Dairy Free Pumpkin Whoopie Pies

Ingredients
  

  • One batch of Gluten and Dairy Free Pumpkin Cookies baked and cooled
  • 1 1/2 cups marshmallow fluff purchased or homemade (just be sure gluten free)
  • 1 1/4 cups shortening non-hydroginated and organic preferred
  • 1 1/4 cups powdered sugar
  • 2 tablespoons maple syrup

Instructions
 

  • Cream shortening and marshmallow fluff until smooth and fluffy. Add powdered sugar and maple syrup. Blend together, scraping down mixing bowl as needed until incorporated.
  • Put about 2 teaspoons filling on the flat side of half of the pumpkin cookies. Top filling with another pumpkin cookie, sandwiching filling. Enjoy!

How was your weekend?  My youngest daughter had a sleepover with a sweet friend.  Of course, that meant treats with sprinkles, nachos for dinner and a pumpkin French toast casserole for breakfast in between all the giggling, glow stick fun, playing with dolls, and reading by the fire.  So much fun!

This weekend was also the High School Boy’s Cross Country Team Banquet.  It is a wonderful experience to listen to the kids and coaches speak about the team and what the season meant to them.  Not just the performances, but how they melded into an extended family.  I can’t wait for the High School Girls Cross Country Team Banquet next weekend.  It is amazing to me to see these kids, many who I knew from a young age, turning into such poised, dedicated and kind-hearted young adults.
