Orange Marmalade Chicken – Gluten Free-zer Friday

I love the flavors of this easy chicken dish.  It has a bit of sweet, a bit of savory, just the thing when you are craving take out orange chicken, but want a home cooked meal.  And the fact that it is gluten and dairy free?  Total bonus!

Gluten Free-zer Friday - Orange Marmalade Chicken

Servings 8

Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup orange marmalade
  • 1/4 cup honey
  • 1 tablespoon gluten free soy sauce
  • 1 cloves minced garlic
  • 1 teaspoon minced fresh ginger
  • salt and pepper to taste

Instructions
 

  • Put all ingredients into a gallon sized freezer bag. Mix all ingredients together. Remove as much air as possible, seal, label and freeze.
  • To serve: Thaw. Put all ingredients into an oiled baking pan. Bake at 350 degrees for 25 to 30 minutes until chicken is cooked through, basting a few times with the marinade.
  • If you would like to serve this right away, simply let the chicken marinate for a couple of hours before baking as directed.

Garlicky Chicken Thighs in Red Pepper Sauce

Garlicky Chicken Thighs in Red Pepper Sauce

Ingredients
  

  • 2 2/3 tablespoons olive oil
  • 10 2/3 each bone-in chicken thighs
  • salt to taste
  • ground black pepper to taste
  • 8 teaspoons garlic minced
  • 2 2/3 teaspoon fresh thyme
  • 1 1/3 cups gluten free chicken stock
  • 4 medium jarred roasted red peppers chopped

Instructions
 

  • Heat oil in skillet over medium-high heat. Season chicken with salt and pepper. Place chicken into the pan and cook until browned. Flip chicken and brown the other side. Set aside to cool. Add garlic and thyme to the pan and sauté until garlic is lightly browned. Add stock to pan and scrape up the brown bits in the pan. Add red peppers. Allow to cool. Dividing between the indicated number of freezer bags, put chicken and chicken stock mixture in the bag(s). Remove as much air as possible, seal, label and freeze.
  • To serve: Thaw. Put chicken in an oiled baking dish and pour stock mixture over it. Bake in a preheated 425 degree oven for 30 minutes or until chicken is cooked through.

Arroz Con Pollo for the Slow Cooker

Slow Cooker Arroz Con Pollo

Ingredients
  

  • 2 cups uncooked long grain brown rice
  • 1 1/3 tablespoons olive oil
  • 1/3 cup white wine
  • 1 1/3 cups onion minced
  • 5 1/3 teaspoons garlic minced
  • 2 2/3 cups bell pepper green, seeded and diced
  • 2 2/3 cups bell pepper red, seeded and diced
  • 5 1/3 cups tomatoes diced
  • 1 1/3 teaspoons dried oregano
  • 1 1/3 teaspoon ground cumin
  • 2/3 teaspoon gluten free chili powder
  • 5 1/3 cups gluten free chicken broth
  • salt to taste
  • ground black pepper to taste
  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 1/3 cups frozen peas

Instructions
 

  • Divide the rice and olive oil between the indicated number of quart sized freezer bags. Remove as much air as possible and seal. Divide remaining ingredients between the indicated number of gallon sized freezer bags. Remove as much air as possible, seal, bundle each large bag with a small bag, label and freeze.
  • To Serve: Thaw. Put rice in the bottom of a slow cooker. Place chicken aside and mix the contents of the large bag (except chicken) into the rice. Place chicken on top of rice mixture. Cover and cook on low 5-6 hours.

Gluten Free Dairy Free Chicken with Red Curry and Apples

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken thighs cubed
  • 1 1/3 cups vidalia onion chopped
  • 2 cups celery including leaves chopped
  • 2 cups apples peeled, cored and diced
  • 1 bell pepper yellow, seeded and chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon minced garlic
  • 3 teaspoons gluten free red curry paste
  • 2 teaspoons cream of coconut
  • 1 tablespoon fresh grated ginger
  • 2 cups gluten free chicken stock
  • 2 teaspoons roasted red chili paste

Instructions
 

  • Heat oil in skillet and stir fry chicken until cooked. Add onion, celery, apples and yellow bell pepper, sautéing for 3-4 minutes. Add cumin, coriander, garlic, curry paste, cream of coconut, and ginger. Cook for another 3 minutes. Add stock and red chili paste and simmer on medium low for 4-6 minutes.
  • To Freeze: Allow to cool. Divide the curry between the indicated number of gallon sized freezer bags. Remove as much air as possible, seal, label and freeze.
  • To serve: Thaw. Heat through. Thicken sauce with starch of choice if desired and serve over rice.

Thai Chicken or Turkey Burgers – Gluten Free-zer Friday

It is no secret I like a little Asian inspired flavor in my menu and these tasty Thai inspired burgers really hit the spot when you want something different from the average burger.  I served these on my gluten free hamburger buns with grilled zucchini on the side.  Yum!

Ingredients
  

  • 1 1/2 pounds ground chicken or turkey
  • 1/4 cup natural peanut butter
  • 1/3 cup thinly sliced green onions
  • 2 tablespoon gluten free soy sauce
  • 2 teaspoon fresh grated ginger
  • 1 teaspoon minced garlic
  • pinch red pepper flakes
  • 1/4 teaspoon salt

Instructions
 

  • Mix all ingredients together until well blended. Form mixture into 6 patties and cook in an oiled skillet or grill until cooked through.
  • To Freeze: After forming patties and before cooking, separate patties with waxed paper. Place patties into a freezer bag, remove as much air as possible, seal and freeze.
  • To serve: Thaw. Cook in oiled skillet or on grill until cooked through.

Secret Recipe Club – Mongolian Chicken and Veggies

It is time for Secret Recipe Club reveal day!  Woo-hoo!  What is the Secret Recipe Club?  It’s a lot like Secret Santa, but with recipes.  Each month you are assigned a blog.  After selecting a recipe from that bloggers repertoire, you make and post it on reveal day.  It is a great way to find fun recipes and blogs.  I like how it gets me to actually sit down and go through another person’s blog.  Blogs are a lot of work and take time to put together.  Instead of skimming through just the new stuff (as is usually easier when we see a new blog) it is fun to really sit down and go through what else the blog has to offer.  Fun stuff!
