Menu Plan Monday – June 29, 2015

Hello! It’s short and sweet (and a little late) for me this week. The girls are off to Girl Scout camp and I get to help in the kitchen and where ever else they need me. 🙂

Heather of Celiac Family is hosting the Gluten Free Menu Swap. The theme is Head over to her blog for some tasty menu planning inspiration!

(I am not able to upload photos at this time. The camp connection is a little wonky. Imagine a cool watermelon tag here and fin pics from camp. I’ll have to update when I get back.)

Our menu this week is all camp food all the time. We’ve brought our own gluten free, dairy free versions of all the camp deliciousness that is happening.

Caddie breakfast for week is continental. Cereal, bagels, pop tarts, juice. My girls have gluten free bagels and dairy free cream cheese. I made a veggie packed egg bake for myself.

Sunday Caddie training day:
Snack: granola bar
Dinner: foil dinner with ham, potatoes and cheese. Oriental salad with coleslaw mix, ramen noodles, etc. Box Oven Brownies
Because the girls are training in a couple different groups, meaning some will be eating diner at 4 and some at 7, there is a back up snack/meal of hotdogs.

Monday: Lunch: Wrap sandwiches (ham, turkey, lettuce, tomato, cheese, ranch, tortilla), pickles, chips, apples, and s’mores.
Dinner: Baked Potato Bar Night with veggies and brownies

Tuesday: Walking Tacos (hamburger, cheese, lettuce, salsa, sour cream – build your own), spanish rice, fruit, dirt cups (chocolate pudding, crushed oreos, gummy worm).

Dinner: Everyone goes home to rest and refresh. We’ll probably have omelets and a salad.

Wednesday: Pita Pizzas (pita stuffed with cheese, sauce, pepperoni – build your own – we’ve got gluten free wraps folded in half and stuffed with pizza ingredients), lettuce salad, bananas, chocolate creatures (Chinese crunchy noodles, mini marshmallow, chocolate flavored almond bark to make little haystacks – (we’ve got gluten free chocolate crispy bars).
Dinner: Pasta bar, salad, cake. I made a gluten and dairy free lasagna for us.

Thursday :  Girl Scout Gumbo (hamburger, vegetable soup, cheese, onion, green pepper, served on Fritos – I have a gluten and diary free version), Milky Way Salad (Milky way pieces, apples, bananas, cool whip – We have vanilla coconut-based yogurt with apple slices and gluten and dairy free chocolate chips), box oven brownies.

Dinner: Hot dogs, lettuce salad, chips, watermelon, cookie.

Friday Breakfast – French toast sticks, syrup, bacon, fruit, apple juice.

The Great Gluten Free Campout – Box Oven S’more Brownie Bars

It is time for week two of The Great Gluten Free Campout!  Woo-hoo!  I am so excited to participate in The Great Gluten Free Campout!  Four bloggers over the next four weeks will be partnering to bring you a full range of recipes:  Breakfasts, Desserts, Sides and Snacks, and Campfire Classics.  Each blogger will be hosting a category.  Last week I hosted breakfast featuring Box Oven Muffins and Eggs.  And this week?  Oh yeah, baby!  I am hosting Desserts!

So, remember last week when we talked about box ovens?  Yep, we will be using a box oven again.  When I first learned about box ovens, it was at Girl Scout camp.  Almost every year one on the lunches has box oven brownies.  They are super simple to make.  Simply set up your box oven, stir up a box mix of brownies (use gluten free mix for the gluten free crowd, of course) and bake them up in the box oven using the time on the mix’s box.  Yum!

I wanted to make brownies, but my girls and I thought we should kick it up a bit to new gooey deliciousness, so decided S’more ingredients of marshmallows and grahams would pair well with the brownies.  You can use homemade or store bought gluten free graham crackers OR try using crushed gluten free sugar cones like we did for our example bars.  So tasty!

You can always use your own homemade gluten free brownie batter (I have a couple here on the blog), but for easy camping fun, I used Better Batter Flour’s Brownie Mix for this example.  Baking time may vary depending on the batter used.  Start checking if the bars are baked through at the longest baking time for the brownie recipe you use.

 

Box Oven S'more Brownie Bars

Course box oven, brownies & blondes, camping, dairy free, desserts, gfcf, Girl Scout, gluten free
Servings 16 to 20

Ingredients
  

  • 1 gluten free box brownie mix or homemade, batter made dairy free according to instructions
  • 2 cups gluten free mini marshmallows
  • 1 cup broken and crumbled gluten free graham crackers or gluten free sugar cones
  • 12 "x8" foil pan
  • oil for pan
  • Box oven

Instructions
 

  • Set up box oven. See this post (http://angelaskitchen.com/2013/07/02/the-great-gluten-free-campout-box-oven-muffins-and-eggs/) for instructions. While charcoal is flaming and heating up, make gluten free brownie mix according to instructions on box.
  • Oil foil pan. Pour batter into pan, patting out batter to cover the entire pan. Sprinkle crushed gluten free graham crackers evenly over batter, then add mini-marshmallows.
  • When coals are ready, place brownies on cans in box oven. Set the box over brownies and allow to bake for 5 minutes longer than the longest bake time on the brownie batter box (in the case of Better Batter Brownie Mix, allow to bake for 30 minutes) before checking to see if brownie bars are done. Bars are done when bakes through in center and marshmallows have melted and browned slightly.
  • Remove brownies from box oven and allow to cool before slicing.
  • To bake these at home, bake in a 350 degree F oven for the shortest time on your baking mix box before checking for doneness.

I am not sure who know this, but having a successful and food-safe week at Girl Scout Camp was the push for me to start my blog over seven years ago.  Camping is near and dear to my family’s heart and all my kids go to camp every year.  I even have an entire category devoted to camping food on my blog.  Who doesn’t like a good S’more?  Gluten and dairy free, of course!  🙂

Menu Plan Monday – June 24, 2013

This past weekend was quite the adventure.  We lost power during a storm Friday evening (and some large tree branches), needed to do branch clean up on Saturday, get my youngest to a roller skating birthday party (fortunately that area had power) and prepare some upcoming posts (without power and wifi) and assemble food for camp (still no power).  Fortunately, a local coffee shop had both wifi and power and magical coffee to power me through some work.  Thank you, coffee shop!  You saved my bacon!  We were able to run a generator for the fridge, freezer and pump, so everything was fine.  I feel bad for my son, though.  He has been on a canoe trip to the BWCA and has no idea he is coming home to a yard clean up and wood stacking project!

The girls and I will be at Girl Scout Day Camp this week, and I’ll need plenty of easy meals for the nights we will be home.  Thank goodness I have some simple things to pull from the freezer as I know I will be too wiped from all the camp fun to care what we eat.  🙂

My older daughter is part of the group of girls that will be helping run the camp, so she is staying over night most of the nights, so brought food for those nights (and treats, can’t forget those!) and her breakfasts.  Getting ready for camp for us always means packing our food.  We usually go to volunteer run day camp, so you never know who will be leading it or their knowledge of allergies.  I have found for the most part that when you check ahead, ask for the menu and inform them you will take care of bringing your own things, the leaders are pretty open to it.  The leaders have a lot to get ready, so taking care of your own food helps take one thing off their plate.  It also keeps you and your child safe (don’t have to worry about cross contamination) and it is a good lesson in planning for your child.  I usually get the menu as soon as I can, then go over it with my kids.  We decide what we can make ahead of time and freeze, what needs to be purchased closer to the time of camp, and what we can consolidate to make less work for us.  Brownies and cupcakes both on the menu?  Make a recipe of chocolate cupcakes or bake the cake in a pan and use it for both meals.  Give yourself a break, you don’t have to make everything on a camp menu, but be sure to make the things that are important for your camper and have something available for each snack and dessert even if they don’t perfectly match up.  The big thing my kids don’t want to miss out on at camp are s’mores, so I always am sure to pack s’more kits for them.  The rundown of our Girl Scout Camp menu will be up at Angela’s Kitchen on Saturday, so stop by then and see how we went to camp gluten and dairy free!

Camping Gluten Free – Donuts or Doughnuts?
