Good-For-You Green Pumpkin Pie Smoothie at The Balanced Platter

I’ve got a fun smoothie for you today over at The Balanced Platter. It may be packed with good-for-you greens, but it taste like creamy, dreamy pumpkin pie. Yum! Enjoy!

With the start of a new year, and after the extra treats of the holiday season, I like to focus on filling my plate with more vegetable-packed meals. However, even while eating healthier, I do like indulgent-tasting treats. Fortunately, this creamy dairy-free smoothie is not only a wonderful start for your day or after workout pick-me-up, it also tastes fantastic. It may look green, but it tastes similar to a creamy, dreamy pumpkin pie.

Many dairy-free smoothies use frozen banana to give body and creaminess, however my low-carb eating husband challenged me to come up with an alternative ingredient. Instead of banana, Green Pumpkin Pie Smoothie gets it’s smooth texture from avocado, decreasing the sugar and carb content from what is found in the typical smoothie.  A  typical avocado has about 14 grams of fiber, much more than other fruits. The fiber, along with its healthy monounsaturated fat, and higher protein content than most fruits, make avocados a great energy source that keep you feeling full and satisfied longer.

Rounding out the ingredient list for this simple to blend smoothie are pumpkin and spinach. Rich in potassium, a nutrient that helps maintain blood pressure and kidney function, pumpkin is also high in fiber and contains a fair share of vitamin C, an antioxidant essential for healthy skin and gums. The dark leafy green of spinach is a nutritional powerhouse all on its own. There are few food sources that offer more vitamin K than spinach, essential for blood clotting and bone health. Recent research also shows that vitamin K may help decrease inflammation in the body. Other important nutrients found in spinach are beta-caroteen, lutein, folate, and magnesium.

If you have family members on the fence about green smoothies, give this one a try. The creamy texture and pumpkin pie flavors might just win them over. Even my 10-year-old loves this smoothie as an after school snack and considers it a treat!

  • Berry Lemonade Green Smoothie
  • Raw Vegan Pina Colada Green Smoothie
  • “Sneaky Green” Healthy Chocolate Shak

Good-for-You Green Pumpkin Pie Smoothie

Serves 2 to 3

  • 1/2 cup ice
  • 1 cup packed fresh spinach
  • 3/4 cup pumpkin puree
  • 1/2 ripe avocado
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice (or 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg and 1/8 teaspoon ground cloves)
  • *liquid stevia, to taste
  • 1 to 1 1/2 cups unsweetened dairy-free milk substitute of choice, such as coconut or almond milk
  1. In a high powered blender, place all ingredients except milk substitute in order listed. Add one cup of the milk substitute, reserving extra if needed. Cover blender and blend until completely smooth. Add remainder of the milk substitute and blend, if needed, if you prefer a thinner smoothie.
  2. *Other sweeteners for this smoothie we have used are 1 tablespoon honey OR 3 pitted Medjool dates OR 2 tablespoons gluten free brown rice syrup or maple syrup.

Secret Recipe Club – Watermelon Limeade

Watermelon Limeade

 

It is time again for Secret Recipe Club reveal day!  Woo-hoo!  What is the Secret Recipe Club?  It’s a lot like Secret Santa, but with recipes.  Each month you are assigned a blog.  After selecting a recipe from that bloggers repertoire, you make and post it on reveal day.  It is a great way to find fun recipes and blogs.  I like how it gets me to actually sit down and go through another person’s blog.  Blogs are a lot of work and take time to put together.  Instead of skimming through just the new stuff (as is usually easier when we see a new blog) it is fun to really sit down and go through what else the blog has to offer.  Fun stuff!

 

My assigned blog this month was from Lynne at Cafe Lynnylu.  I was so exciting to get her blog this monthA  I have been enjoying her blog for quite awhile now.  Her photos are amazing and I love living vicariously through her photos and stories (and recipes, can’t forget those) from her travels.  I had the hardest time deciding what to make.  She participates in Thirsty Thursday if you need a libation, and has WAAAAAAYYYYY too many delicious things to pick from (Roasted Lemon Sorbet, Two Steps From Hell Chile Verde, Quick Plum Jam were all top contenders for my attention).  But with being on our own this past week with just the girls, I let them help pick and they were fascinated by her Watermelon Ginger Limeade.  It was just the thing, with its pretty ruby pink color to grace our all girl week.  But because my littlest girlie is a picky bug, I didn’t use ginger and upped the lime to compensate.  I know, I know, the whole point is the ginger, and while I will make it that way sometime, sometimes you have to bend with the flavor likes of who is home that day.  🙂

 

This was a really refreshing drink and perfect for relaxing on the porch after a day of gardening.  After crushing the watermelon for juice, I gave the pulp to my chickens and let them have a feast, too.  Treats for everyone!  Thanks for the wonderful recipe, Lynne!

Secret Recipe Club – Watermelon Limeade

Course beverage, dairy free, gfcf, gluten free
Servings 4

Ingredients
  

  • 8 cups chopped fresh watermelon
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 tablespoon lime zest no white pith
  • 3/4 cup fresh lime juice

Instructions
 

  • In a small saucepan, bring sugar and water to a simmer. Remove from heat and add lime zest. Cool to room temperature, then cover and place in refrigerator to chill.
  • Place watermelon in a colander and mash with a potato masher or very clean hands. Allow juice to drain. You should have about 4 cups juice. Cover and chill.
  • When both items are cold, mix lime juice with sugar syrup. Strain the mixture through a fine meshed sieve while pouring into a pitcher. Pour watermelon juice into pitcher, also through the fine meshed sieve. Stir to combine. Pour over ice and garnish with watermelon wedges.

This week, Heather of Celiac Family is hosting the Gluten Free Menu Swap.  She picked Holiday Drinks as the theme this week.  For my family, a big slow cooker filled with dairy free Hot Chocolate has to top the list.  For Christmas Eve dinner my family usually has sparkling apple-lingonberry juice and sparkling pear juice.  Mmm…  And this year we are looking forward to making dairy free eggnog with our own home-grown eggs.  What special beverages do you serve over the holidays?

 

Oh, and speaking of beverages… here is my Christmas gift to you!  A Gluten Free Dairy Free Smoothie Packet.  The conference I created it for never did end up using it, but it seems perfect with the new year and new resolutions creeping up around the corner so I thought I would share it with you.  Enjoy!

 

Freezer cooking plan for the week:  Just like last week, I won’t be making any freezer meals this week.  I’ll be using the meals I have been making a bit at a time over the past few weeks for our dinners.  Having our dinners ready makes the evenings run more smoothly so I can concentrate on enjoying the season instead of what to make for dinner.

The week’s breakfast options:  Veggie omelette, Gingerbread Pumpkin Waffles, and various fruits.

The week’s lunch options:  Nut or sunbutter sandwiches on Amish Friendship Bread, leftovers, various fruits and veggie sticks.  Because the kids are home this week, they want to make Easy Homemade Pizza Rolls and Spinach and Artichoke Pizza.

Monday:  Our big family meal is always on Christmas Eve.  Due to appliance issues we are having a different dinner than usual.  It should be fun!  This year we are having Pomegranate-Braised Ribs (I am using boneless ribs in this recipe- YUM), rice pudding (my grandma’s recipe), a big mixed green salad topped with poppy seed dressing, sautéed green beans with roasted garlic and toasted sliced almonds.  We’ll have various Christmas cookies for dessert.

Tuesday:  The big meal on Christmas Day is brunch after we open our gifts from Santa.  We are having Slow Cooker French Toast Casserole, Homemade Turkey Sausage, and fruit salad.

Wednesday:  Left over day with a big salad.  I am thinking this Cobb Salad done dairy free is just the thing – so tasty!

 

Thursday:  Pumpkin Enchiladas (from the freezer) and Shredded Balsamic Beet & Kale Salad

 

Friday:  Roasted Chicken Pot Pie (from the freezer) and a big romaine salad with extra chopped veggies with Thousand Island Dressing

Strawberry Banana Smoothie

Gluten Free Dairy Free Strawberry Banana Smoothie

Ingredients
  

  • 1 ½ cups fresh or frozen strawberries
  • 1 banana peeled and frozen
  • 1 6 oz non-dairy vanilla yogurt soy, coconut or rice or ½ cup of dairy free milk substitute (almond, coconut, rice, etc.)

Instructions
 

  • Place all ingredients in a blender. Cover and blend ingredients until smooth. You can adjust the consistency by adding more ice if it’s too thin or more liquid if it’s too thick. Pour in glasses.

Peach-Mango Smoothie

Peach-Mango Smoothie – makes 2 servings

1 peach, peeled and sliced (fresh or frozen)
1 mango, peeled and diced (fresh or frozen)
1/2 cup dairy-free milk substitute (almond, coconut, etc)
1/2 cup orange juice
Place all ingredients in a blender.  Cover and blend ingredients until smooth. You can adjust the consistency by adding more ice if it’s too thin or more liquid if it’s too thick. Pour in glasses.

Ingredients
  

  • 3/4 cup sliced fresh or frozen strawberries
  • 1/4 cup fresh or frozen raspberries
  • ½ cup dairy-free milk substitute almond, coconut, etc.
  • ½ of a 6oz. container strawberry dairy-free yogurt soy, coconut, rice, etc.
  • 1/2 cup small ice cubes or crushed ice optional if using frozen fruit

Instructions
 

  • Place all ingredients in a blender. Cover and blend ingredients until smooth. You can adjust the consistency by adding more ice if it’s too thin or more liquid if it’s too thick. Pour in glasses.
