Menu Plan Monday – March 23, 2015

GF Menu Swap-pineapple

 

Spring break is over for us (and it SNOWED last night) so we’re getting back to our regular routine. I’ve started cooking down sap in our turkey roaster (the only good good excuse for snow in the Spring is that it’s ‘sugar snow’ and means the syrup season is still going strong. Yum!)

This week with the weather changing from snowy to rainy to warm, I wanted warming meals alternating with some summer-time flavors. Fortunately this week’s them is Pineapple, and you can’t get much more tropical than that! I’m hosting the Gluten Free Menu Swap this week, so just drop me an email or comment if you have a gluten free menu you would like to link. I can’t wait to see what everyone is cooking up!

Carrot Cake Pancakes

Gluten Free Dairy Free Turkey SausageSimple Arugula Garden Saladgluten & dairy free freezer pizza3Monday: Pineapple Pork Chops with a salad made of baby kale, roasted asparagus, walnuts and topped with poppyseed dressing

Tuesday: Carrot Cake Pancakes with crushed pineapple and toasted coconut topping, homemade turkey sausage and grapes

Wednesday: Sweet and Sour Meatballs with quinoa and Simple Arugula Salad

Thursday: Pork and Pineapple Kabobs (broiled or on the grill – depending on the weather) with Spinach Salad and blender corn bread

Friday: Hawaiian Pizza and a big chopped salad

 

What else is being served up this week?

Heather at Celiac Family has some delicious things on her menu this week: BBQ Chicken Sandwiches, Ground Beef Tacos with Avocado Salsa, Grilled Chicken with Pineapple Mango Salsa, Hamburgers with Roasted Sweet Potatoes and Green Beans, Fried Cod, and Grilled Chicken Kabobs with Pineapple. Yum! Be sure to check out her Tropical Fruit Salad, Tropical Mimosas and amazing Pineapple Black Bean Salad if you need new ways to gobble up pineapple.

    Yum! It ALL sounds so good. The pork chops, the pancakes, the sausage.... I may have to change up my menu a little. I definitely need to go buy some more pineapple. :)
