GF Menu Swap-Winter Squash

 

I am thrilled to be hosting the Gluten Free Menu Swap this week! The theme is Winter Squash. I use winter squash (and pumpkin) quite a bit in savory and sweet recipes. I like to roast it up on the weekends if planning to serve it during the week to save time on busy weeknights. Cooked squash also freezes beautifully, so you can have it cooked up, ready to thaw and serve quickly when needed. How do you serve winter squash?

 

Be sure to come back as the day goes on an I add everyone’s menu’s who is participating in the Gluten Free Menu Swap. I can’t wait to see what everyone is cooking up!

Monday: Butternut & Beef Stew, Blender Corn Bread and veggie sticks with Dairy Free Ranch Dip

Tuesday: Chicken Marsala, Roasted Hubbard Squash and a mixed greens salad with Basic Vinaigrette

Wednesday: Pizza Sloppy Joes on Gluten Free/Dairy Free Hamburger Buns and Arugula Salad

Thursday: Spicy Thai Pumpkin Soup, Curried Chicken Melt Sandwiches (done gluten and dairy free), and salad

Friday: Spring Vegetable Soup, Salmon Sweet Potato Cakes and Roasted Dijion Brussels Sprouts

 

What is everyone else serving this week?

Melissa of Mom’s Plans is showing us what she ate last week, which is fab because it gives her a chance to see if a recipe really is worth making again (and there are lots of food pics, which is my favorite part!). Check out her breakfast and lunch ideas, too (the Roasted Tomato Soup has totally peeked my interest -yum!) Sounds like they had a delicious week of roasted chicken with zucchini spears and diced potatoes, Gluten Free Chicken Stew with Carrots and Celery, Meatloaf, zucchini spears, brown rice, Tomato and Vegetable Soup (minus the beans and turkey), and Tuna salad, Daiya cheese rice tortilla quesadillas, fruit salad. Sounds so good!

Melissa at Gluten Free Always may add some more soup to her menu (it’ll be COLD out there this week), but for now has planned Smoky Chipotle Chili Cheese Mac, Beef & Cornbread Skillet, Lemon Garlic Thyme Chicken, Sloppy Joe, Chicken Enchilada Bake, Teriyaki Beef, and Red Chicken Chili. Sounds delicious!

Heather of Celiac Family gives us a tasty menu, as usual. 🙂 She’s got Hamburger Stroganoff with Gluten-Free Tagliatelle Noodles, Roasted Chicken with Maple Glazed Roasted Delicata Squash and Brussels Sprouts, Pulled Pork with Garlicky Baked Butternut Squash and Green Beans,  Easy Garlic Shrimp over Spaghetti Squash with Simple Asparagus, Chicken Wings with Baked Carnival Squash with Apples, and  Quinoa Indian Chickenwith Sautéed Garlic Spinach. I hope she doesn’t mind if I show up for dinner!

    Ooooh, it all sounds so good. My family would love the Chicken Marsala, and Spicy Thai Pumpkin Soup and Curried Chicken Melt sounds delicious to me!
