Menu Plan Monday – July 22, 2013

Heather is hosting the Gluten Free Menu Swap this week over at Celiac Family.  The theme is Grapes.  Grapes are so lovely right now!  I have been enjoying them on a salad with Orange Poppy Seed Dressing and in a gluten free pasta salad tossed with roasted chicken, walnuts and Dairy Free Ranch Dip.  I like serving grapes in their dry form too, such as in Broccoli Salad.  What flavors do you pair grapes with?

 

Freezer cooking plan for the week:  Gluten & Dairy Free Supreme Pizza and Citrus-Kissed Chicken Fingers will both be making their way into my freezer this week.

The week’s breakfast options:  Blueberry Muffins, Chocolate Zucchini Bread, scrambled eggs with garden veggies, and melon.

The week’s lunch options:  Sandwiches made with Gluten Free Wholesome Multi-Seed Bread, veggies and fruit.

Monday:  Gluten & Dairy Free Supreme Pizza with mixed green salad and favorite dressing


For the freezer:
   Make a double batch of Gluten & Dairy Free Supreme Pizza, two for dinner, and two for the freezer.  While baking dinner, place the two to freeze in the coldest part of the freezer.  After dinner, wrap the pizzas well, remove as much air as possible, seal, label and freeze.

 

Tuesday:  Citrus-Kissed Chicken Fingers with Broccoli Salad 

For the freezer:   Make a double batch of Citrus-Kissed Chicken Fingers, one for dinner, and one for the freezer.  Allow second batch to cool and freeze while eating dinner, then package into a freezer safe container separated by waxed paper, remove as much air as possible, seal, label and freeze.

 

Wednesday:   Garlic Lime Salmon and Grilled Vegetable Basket and grapes

 

Thursday:  Spinach Burgers on Potato Rolls with vegetable sticks with Dairy Free Ranch Dip and watermelon

 

Friday:   Coconut Lime Chicken and Sweet Bell Pepper Salad

    Just found your website via Pinterest. This is a HUGE lifesaver for me. I am about to move to Chicago on my own (I turned 19 yesterday) and have not been able to figure out how to be a college student and have allergies to gluten and dairy. I decided to cut gluten and dairy out of my diet when I'm in Chicago (a big part of "putting my big girl panties on") and I believe this website just saved me. Can't wait to learn! Kristen
