Camping lunch and snack ideas

It is time for week three of The Great Gluten Free Campout!  I am so excited to participate in The Great Gluten Free Campout.  Four bloggers over four weeks have partnered to bring you a full range of recipes:  Breakfasts, Desserts, Sides and Snacks, and Campfire Classics.  Each blogger will be hosting a category.  Last week I hosted breakfast featuring Box Oven Muffins and Eggs and for dessert week I made Box Oven S’more Brownie Bars.  This week is all about sides and snacks.

When we camp, I don’t generally plan a menu as such, as decide what from each category below to bring.  For a weekend trip I may pack a different  protein/carb/fruit and veggie/snack mix for each day or to last a few days each on a longer trip.  Packing a variety of snacks keeps things interesting, cravings down, and offers a mix of nutrients to fuel you on those long hikes, or lazy float times in the canoe.  What do you bring for lunch when you camp?

Lunch/hiking snacks: (Pick something from each category for each day)

Protein:

GFCF turkey sticks or summer sausage (I like to get nitrate free ones, if possible)

GFCF jerky (I make my own, but you can get nitrate free, gluten free kinds at health food stores or by ordering on the net)

Peanut butter/nut/sun butter (you can get this in little packets now – awesome for camping!)

Hummus

Hard boiled eggs

Nuts or seeds

 

protein/fruit/carb mix:

gorp (good old raisins and peanuts or any mix of dried fruit and nuts)

snack mix (I like mixing gluten free pretzels, banana chips, almonds, dried cranberries, pumpkin seeds with something fun yet sturdy, like gluten free animal crackers or a gluten free cereal with a larger shape)

Carb:

Rice crackers or homemade crackers

Small gluten free cookies cookies or sweet crackers (like gluten free grahams

Any left over gluten free biscuits, pancakes or rolls from breakfast

Noah’s rolls

Granola bars (I am loving these crispy and chewy ones from Naomi right now!)

Gluten free pretzels

 

Homemade Fruit Leather with Toppings

fruit/veggie:

Dried fruit

Fruit leather (plain or topped)

Fruit (nothing too soft and delicate – think sturdy, like and apple!)

Veggie sticks (broccoli, carrots, celery, etc.)

Kale chips
