Menu Plan Monday – May 28, 2012

I am hosting the Gluten Free Menu Swap today.  Come on back later for my menu for the week and to see what everyone else has on their plates this week.  I’ll post it on Facebook when the menu is live.  🙂  The theme is Memorial Day!  What are you serving today?  Do you do anything special for Memorial Day and to kick off the summer season for the holiday weekend?

Paige at Not Missing a Thing share with us her delicious meals from last week.  She served Salad Dressing Chicken and Rice, a dairy free homemade hamburger helper, a honey mustard version of Alice Springs chicken, Gina chicken over rice (I have made this and it is DELICIOUS!), oven baked chicken cacciatore with quinoa, egg-free shrimp fried quinoa and hamburgers on the grill.  Yum!

Emily at Our Frugal Happy Life has a Memorial Day BBQ with circuit pastors and families planned today.  Sounds fun!  For the rest of the week she is serving slow cooker chicken tacos with salad, gluten free pizza pie with garlic toast or rolls, ranch chicken with roasted potatoes and veggies, a meal from on the grill, and going out to eat.  Sounds like a tasty week!

Heather of Celiac Family has also planned on grilling today for Memorial Day and enjoying snack foods and fresh fruit and veggies such as carmel corn puffs, chocolate chip banana muffins, beef kabobs, potato salad for a crowd, cold wild rice salad and red, white and blue fruit pizza.  For the rest of the week she is serving grilled burgers and chicken breast with ships and avocado salsa, baked teriyaki chicken tenders, waffles served with bacon and tropical black bean salad, and salmon with a Balsamic glaze.   Delicious!
