Menu Plan Monday – August 1, 2011
Whew! Have I been relaxing or what? Love it! Well, watch out, because I am back and ready to go. For my menu this week, I’ll be serving several things I have on the blog and updating the original posts with photographs, so you will want to check back for that as I go along this week. I thought the visuals might be helpful…
This month, starting on Wednesday, I’ll have a series devoted to back to school: packing lunches, pre-cooking for those busy school days, filling our freezers with homemade breakfasts with plenty of links for yummy recipes for lunch time fun. Just little tips and tricks that I do to make packing and bringing a lunch a bit easier, along with what I am pre-prepping myself to get ready for the school year.
To start my back-to-school prep this week, I’ll be baking Corn Dog Muffins (double batch/put in the freezer) and Banana Bread Muffins (double batch/put in the freezer). I’ll update the above links with photos when those are baked off. 🙂
Cheryl of Gluten Free Goodness is our host for the Gluten Free Menu Swap. She has picked peaches for the theme ingredient. I LOVE the peaches. Mmmm… Thanks, Cheryl! For yummy peachy love, I think I’ll be making another batch of Peach Muffins, and a big batch of Bombay Chicken with peaches. They both freeze really well and will be a welcome addition to my back-to-school breakfast and lunch prep plans, unless, of course, I eat them all by myself! 🙂

Citrus Kissed Chicken Fingers with Seasoned Green Beans
Friday: Have friends over. We’ll be using the new fire pit. Woo!
Hotdogs with the works, homemade hotdog buns, fresh spinach salad
