Honey Chicken Kabobs

My family loves to grill.  When I was growing up, my dad was the one outside in the dead of winter, firing up our grill and roasting a turkey.  Mmmmm…  If you are stuck in a rut and need some grill-time inspiration, I have a bunch of marinades for summer grilling you can freeze ahead of time whenever your favorite grilling items are on sale.  Also, the Gluten and Dairy Free Once a Month Mom freezer menu for May 2011 and June 2011 both have several marinades and kabobs (I love kabobs!) for you to try.  I like to mix up my marinades ahead of time, pop in the meat, then toss the whole thing in the freezer.  I also like to freeze already seasoned hamburgers (like Mexi-Burgers, salsa burgers, Spinach Burgers, or California Turkey Burgers).  It’s so nice to be able to fish around in my freezer to find something yummy to thaw and grill up (without having to think about it or make it – Woo!) before heading out for a fun day outside with the family.

Monday: Boy Scout Court of Honor 

Chicken Blueberry Mango Salad with Poppy Seed Dressing and Rhubarb Strussel Muffins

Tuesday: Family is going to the Twins baseball game!! (List of Gluten Free items available at Target Field)

Hot Dogs (of course), homemade buns, Spinach Salad, seasoned oven fries (using  Roasted Rosemary Potato Recipe, but cutting in a crinkle cut fry shape and using half sweet potatoes, half white)

Wednesday: Bake chocolate chip cookies (to use for s’mores), GF granola bars and brownies (maybe Rocky Road Brownies?) for the youth group trip

Still up in the air until I hear what they are serving at the youth retreat (my daughter needs to pack and bring her own food.  I like to make it easy on ourselves by having a similar meal and making an extra serving to pack.) Tacos with all the fixings (using my taco seasoning) and a salad

Thursday: Daddy is leaving on a trip for the weekend./Soccer

Friday: The big kids are leaving for youth group retreat for the weekend.  It is just me and the little peep for a couple of day’s of snuggling and baking.  I will let Princess Lovebug pick the menu (but I am betting she will pick Chicken Thai Pizza (no peppers or cilantro on her part) strawberries and a spinach salad with lots of snuggle time.

 

What is on everyone else’s plate?

Carrie of Ginger Lemon Girl doesn’t use the grill a lot, but she is using one of my other favorite cooking tools this week:  the crock pot!  This last week was a busy one, including working with a local journalist who is writing a story about Carrie’s blog and the local gluten free support group.  So exciting!  Carrie has her breakfasts and lunches planned out (those blueberry scones are calling me… mmm…) and some great things planned for dinner.  Her dinners include crockpot rotisserie chicken, sauteed kale with mushrooms with an egg, crockpot white chicken chile, tuna loaf, GF spaghetti with homemade spaghetti sauce and pork chops with baked sweet potatoes and green beans.

 

Wendy at Celiacs in the House is rocking out her grill with me by serving up grilled marinated chicken breast on salad and grilled turkey sliders with spicy slaw this week.  She will also be having Tilapia with coconut curry (yum!  I am a sucker for a good curry, Wendy!), a mysterious salmon recipe test, an equally mysterious shepherd’s pie recipe test, and slow cooker thai beef.  For snacks she is making roasted honey cinnamon chickpeas and sour cream and onion kale chips.

 

Claire of My Gluten Free Home has been working at mastering her grill and it sounds like she is doing great with the tasty eats she is dishing up!  This week she is serving up fire grilled shrimp over penne pasta, grilled salmon salad sandwiches (swoon!), grilled hotdogs, pizza and grilled pork ribs with twice baked potatoes and grilled corn on the cob.  Yum!

 

Renee at Beyond Rice and Tofu is camping in the mountains this week (lucky!) so they will be doing lots of cooking over the fire.  This week they are having pasta with fava beans, sage and garlic, Ma Po Tofu with broccoli, chickpea curry, campfire roasted sausages with potato packets, pie iron pizzas and pie iron fruit pies.  Totally fun!  Hope you have a great trip!
