We are back from our southwest trip!  Just flew in today to 6 degree temperatures.  Uhg!  Tough to come back to after 56 degrees, but, it’s good to be home even in the chilly weather.  I will be missing my in-laws, though.  I wish you guys lived closer to us!!

When I made this week’s shopping list, I realized that I have chilies, ginger and garlic, garlic, garlic.  I must be trying to warm up!

Monday:  Nothing too difficult; our plane landed at 2:20 p.m. and I still have to stop at the store and pick up eggs.  If you aren’t into making omelets, Pineapple-girl has instructions with photos.  Simple and tasty!

Avocado, Roasted Peppers and Caramelized Onion Omelets, and Spinach Salad with lots of toppings

Tuesday:  Asian-Style Ribs Stir-Fried Bok Choy and Rice

Wednesday: Chicken Satay, Grilled Vegetable Basket, Hot and Sour Soup and Almond Cookies

Thursday:  Roast Beef Tenderloin, Lemon and Garlic Broccoli, and Gratin Golden Potatoes

Friday:  Butternut Squash Stew, Garlic Linguine with Roasted Bell Peppers, Mixed Green Salad and Banana Nut Bread

Saturday – My big girl’s birthday celebration:  Meatloaf, Mashed Potatoes, Spinach Salad with GFCF Ranch Dressing, Chocolate Cake with Chocolate Frosting shaped like a teapot…
