Egg-sadillas
Another installment in the “Isn’t my hubby cute?” series. Because I know how much he LOVES these pictures being published!
Egg-sadillas are what I call an easy breakfast/lunch/snack/dinner my kids like. Being as we don’t do cheese (or, should I say, it doesn’t do us?) we can’t have quesadillas. Not a problem, we just do something else instead! The egg holds the tortillas together instead of cheese. EGG-sadillas, get it?
I thought I had posted the instructions on another day, but can’t find it, so it must have been my imagination.
Egg-sadillas
There isn’t a recipe per say, mostly just instructions.
veggie oil
2 6” corn tortillas
1 egg
left over meat, beans, or veggies (I like tearing up fresh spinach to add to it), chopped
salsa or guacamole for dipping, if you got it
Put 1 t or so of oil in a small pan to heat over med-high heat. Put one tortilla into pan, then put your egg onto the tortilla. (Before you ask, yes, without the shell! hee, hee!) I usually pop the yolk and gently spread on the tortilla. Sprinkle with meat, beans, veggies, or what-have-you then top with the other tortilla. Press down gently with a spatula to make sure there is egg in contact with the top tortilla so that it will stick together.
When bottom tortilla seems to be getting golden and crispy and the egg is partially set, flip the entire thing over and crisp the other side, cooking until the egg is completely cooked through. It is easiest to cut into wedges with kitchen shears. Serve with guacamole or salsa to top or to dip if you like them and find some in your fridge.

1) Why is there a question mark on the “Isn’t my hubby cute?” series? The exclamation mark is made with the “shift” and “1” key. 2) Notice how Angela only uses picture of me as a kid when referring to me a cute? Hmmmm.
3) BTW, the little girl with me on this picture is my little sister Cheryl. She is 3 years younger than I. I think we would have been about 6 and 3 here?
