My sister (half sis) says her family always makes rice pudding in the crock pot for Christmas.  Make sense to me!  You don’t have to watch it and worry about it burning.

Slow cooker Coconut Rice Pudding

3 1/2 cups milk substitute (such as almond, rice, etc.)

14 fl oz can coconut milk

2/3 cup aborio rice

1/4 cup baker’s sugar (or dried cane juice)

Place all ingredients in the crock pot.  Whisk until combined.  Cook on low for 8 hours.  Serves 4-6.

If I’m okay with dairy, can I use regular milk…or should I still use a substitute?  and should it be whole milk?   Melvin always eats his rice with sugar on it…so I’m sure he’d love this recipe.

Yes, just use same amount of milk for the milk substitute.  Mmmm…creamy…
