Slow Cooker Garlic Chicken

With another round of snow coming, I am glad not to have a snow shelter to build.  (Nice winter survival skills, guys!)  My cozy home and fireplace are huge blessings!

Another Slow Cooker Thursday day!  Woo-hoo!  However, I did not realize it was a breakfast theme this week, so it’s garlic chicken for me.  Garlic’s not just for dinner any more!

Slow Cooker Garlic Chicken (my GFCF version of the 40 garlic chicken that is all over the place right now…)

Pre-browning the chicken does seem to be an extra step for a slow cooker, but it it worth it for flavor and appearance for this recipe.

Medium onion, sliced very thin

40 cloves of peeled garlic (YES!  40!!  Yummy!!)

1 – 3 1/2 lb. chicken, cut up and skin removed

salt

pepper

2 T oil

1/3 cup chicken broth or apple juice

3 T lemon juice

2 t dried lemon peel (or 2 T fresh)

2 t dried parsley (or 2 T fresh)

2 t dried basil

1 t dried oregano

Place onion on bottom of slow cooker.  Place half of the garlic on top of onion.  Heat oil in pan over medium heat.  Season chicken with salt and pepper.  Brown half of chicken in hot oil.  Transfer to slow cooker.  Add rest of garlic to slow cooker.  Brown last half of chicken pieces.  Transfer to slow cooker.  Pour stock and lemon juice into pan and scrape up the browned chicky bits.  Mix remaining ingredients in stock/juice mixture and pour over chicken in slow cooker.  Cover.  Cook on low 4 hours until chicken is done.  (The juices from the chicken will run clear.)

I love garlic!, 40??? Wow, that is a lot!  I make a chicken spaghetti in the crockpot that has a lot of garlic but not that much.  I will give this a try.

While I’m not PEELING actual garlic to accompany our dinner tonight (using dried stuff!!), this post and your comment about garlic helping to keep the family healthy has inspired me to change up my recipe a bit! Won’t Eric be surprised when he comes home tonight and gives me a big kiss!! 🙂 Thanks, Angela.
