I am so much looking forward to this weekend.  We don’t have that many plans, and with three kids that in itself is amazing!  We are supposed to get a ton of snow.  We have heard that one before, and I will believe it when I see it.  However, I did pick up some apple cider and made sure our cocoa supplies were ready.

What is my big plan for that weekend?  Baking.  I love to make tasty treats for the kiddies.  I love having that freezer stocked up.  It might not sound relaxing to some, but for me it is balm for the soul.  I got some new gluten free mixes from Bob’s Red Mill I will make up and profile for you all.  I love their flours!  Pictures will be included.

My other big baking project is to make gluten and dairy free goldfish-style crackers.  That should be a lot of fun.  A sweet friend has just started her son on a GFCF diet on the suggestion of his allergist.  I never really worried about making those types of crackers before, because my kids had never had them.  They didn’t miss what they hadn’t had, so why add something new to figure out?  But I have thought of mock goldfish off and on because they were cute and a lot of kids love them.   Well, let me tell you, he LOVES the goldfish!  He is all about the snack that smiles back.  Let’s see if we can make one that his body can smile back at too.

So, that’s the plan.  Hopefully we will be snowed in with cocoa and the fireplace roaring, cookies in hand.  Hope to see you there!
