Over at the Organizing Junkie, Laura hosts “Menu Plan Monday.”  I thought I would join in this week.  It’s kind of fun to see what other people are having and get some ideas to mix up your own menus a bit.  No, they aren’t gluten and dairy free, but some ideas might spark a new recipe for you.  Besides, the blogs are fun to check out!

Our menu this week (printable grocery list for this week’s dinners):

Monday:  Beef stew (using left over pot roast) and a salad

Tuesday:  My grandma’s calico beans (in the slow cooker) and blender cornbread

Wednesday:  Broiled fish and steamed broccoli

Thursday:  Slow cooker orange chicken with winter squash and sweet potatoes

Friday:    Black beans and rice with Tex-Mex salad

I am always amazed at your ability to plan!  Let’s see…my plan for dinner this week…… Rossa Luna’s on Friday with the girls….have no idea what we’re having tomorrow!  I’m horrible!

Oh I loved looking over your menu.  I cook gluten and dairy free (along with egg free, soy free and nut free) for my allergic son.  I also cooked dairy, wheat and soy free for myself for 7.5 months while I was nursing my youngest in hopes of preventing allergies.  I find that now I am cooking two separate meals each night….one for my son and one for the rest of us since often my allergic son is too fearful to try any new foods even if they are all safe for him.

I will definitely be bookmarking your site.

Cari, I am still being a slow poke.  I have been sorting things out.  On Friday I actually don’t work so I am going to finallize the outline.  You won’t laugh at me will you?  I am such a chicken butt!

Org Junkie, I had really enjoyed your site.  I hope you can find some good ideas here for your son.  Everything in my kitchen is gluten and dairy free (with rotation on eggs, nuts, and soy).  The celiac divas rule the kitchen!

Oh yum….your Calico Beans. I love those. I want to make some, but I think G. might go “ewww” because, well he’s 12 and that’s what he does.

I did menu planning today too, but I don’t adhere to a schedule, I just have the list on the fridge and ingredients at hand. Tonight we had cornmeal crusted scallops, sauteed spinach and sweet potatoes. I have some cool stuff on the list to try:

Turkey and Bean Burritos
Asian BBQ Pork
Pork Fried Rice (with the pork)
Panko Ginger Salmon
Moghul Braised Chicken with Saffron Pilaf
Wheatberry Lentil Soup

Dig it!!!  😉

Since visiting Menu Monday I’ve noticed an increase in special diets. (including our diabetic approved) It’s great to see that because I know that people are looking for those types of recipes.
