Ingredients
3/4cupdairy free mayonnaise
1/2cupdairy free plain yogurt or more dairy free mayonnaise
3tablespoonshoney
1 to 1 1/2tablespoonsgluten free curry powder
1/2teaspoonground ginger
Salt and pepper to taste
6cupscookedchopped chicken or turkey meat
1 1/2cupsapplepeeled, cored, chopped and tossed with 1 t lemon juice, chopped mango or pineapple
3/4cupof golden raisins and/or dried cranberries
3ribs celery diced
1/3cupthinly sliced green onion or chives
1/3cupminced fresh cilantro or parsley
Instructions
In a small bowl mix together mayonnaise, dairy free yogurt (or more mayo), honey, curry powder, ginger, and salt and pepper.
In larger bowl mix together chicken or turkey, apple/mango/pineapple, raisins, celery, green onions, and cilantro or parsley. Fold mayonnaise mixture into chicken mixture until everything is evenly coated.
