Menu Plan Monday – March 9, 2015
Spring is finally in the air! My son is home for Spring Break and the girls start their break Thursday (or according to them, the second they get home on Wednesday). My son will be tapping our trees tomorrow (we love our maple syrup) and the chickens are free to roam the backyard without worrying about snow on their precious toes. Chickens are total divas, I tell ya…
Over the next few weeks expect to see plenty of egg dishes while the chickens kick egg laying into high gear. With nine chickens, we are starting to see quite a few as the days get longer. You’ll also see my menus try to find the balance between warming meals for the cooler days and lighter meals with plenty of fresh greens for those days when I’m craving a meal that tastes of summer.
Today’s Gluten Free Menu Swap is hosted by Heather of Celiac Family and Blueberries are the theme. We eat quite a few blueberries on salads, in our coconut yogurt and Baked Apple Oatmeal, cooked into pancakes and Berry Lemon Muffins and simply eaten by the handful. Some delicious ways we have eaten them include Coffee Cake in a Jar, Chicken Blueberry Mango Salad, Papaya & Coconut Chicken Salad, Lemon Berry Donut Holes, and Purple Power Smoothie. How do you like your blueberries?
Monday: Omelettes, Mixed Berry Fruit Salad and Sweet Potato Hash
Tuesday: Chicken Blueberry Mango Salad and Dosas
Wednesday: Peanut & Cilantro Chicken over Cauliflower “Rice”
Thursday: Fish Tacos with Red Cabbage-Apple Slaw and Mango Salsa
Friday: Gingered Beef & Broccoli Salad Bowl with Berry Lemon Muffins
