Freezer cooking this week:  I’ll be working on my Christmas baking a bit at a time and stashing it in the freezer for the holiday.  I’ll also be putting Bison and Sweet Potato Stew in the Slow Cooker and Pumpkin Waffles in the freezer for another day.

The week’s breakfast options:  I have been experimenting with some high-potein breakfast options (with and without eggs), so will keep experimenting with these.
The week’s lunch options:  Nut or seed butter sandwiches (on banana bread or gluten free Amish Friendship Bread), Salmon & Sweet Potato Cakes, hard boiled eggs, various fruit, and veggie sticks.

Monday:  Bison and Sweet Potato Stew in the Slow Cooker with salad

For the freezer:  Make one Bison and Sweet Potato Stew in the Slow Cooker for dinner and assemble one in a gallon-sized freezer bag for another day.  Remove as much air as possible, seal, label and freeze.

 

Tuesday:   Chicken Cacciatore with salad

 

Wednesday:  Pumpkin Waffles and Homemade Turkey Sausage with fruit

For the freezer:  Make a second batch of Pumpkin Waffles for freezer for breakfast.  Package in a gallon sized freezer bag, with waxed paper separating the waffles.  Remove as much air as possible, seal, label and freeze.

 

Thursday:  Lazy Cabbage Roll Casserole and chunky cinnamon apple sauce

 

Friday:  Buffalo Chicken Pizza and a salad
