Gluten Free Menu Swap-Family Favorites

I am so excited to be hosting the Gluten Free Menu Swap this week here at Angela’s Kitchen.  The theme this week is Family Favorites.  My menu has several of my family’s favorite meals, but other requests I get over  at meal time are for Chicken Thai Pizza, Burgundy Mushroom StewChicken Mango CurryCarrot Cake PancakesChicken (or Turkey) Wild Rice Soup, and Taco Chili.  What is your family’s tried-and-true favorite recipes?

 

Freezer cooking plan for the week:  Rainbow Quiche and Chicken Marsala will both be making their way into my freezer this week.

The week’s breakfast options:  Apple Cider MuffinsChocolate Zucchini Bread, scrambled eggs with garden veggies, and melon.

The week’s lunch options:  Sandwiches made with Gluten Free Wholesome Multi-Seed Bread, veggies and fruit.

Monday:  Rainbow Quiche with Gluten & Dairy Free Herbed Garlic Bread and mixed greens salad with Poppy Seed Dressing

For the freezer:   Make a double batch of Rainbow Quiche, one batch for dinner and one for the freezer.  While eating dinner, allow second batch to cool.  After dinner, slice quiche and package in individual containers for breakfasts.  Remove as much air as possible, seal, label and freeze.  

 

Tuesday:  Apricot Glazed Pork Tenderloin with Rich and Creamy Cauliflower Puree and mixed greens salad with Dairy Free Ranch Dressing

 

Wednesday:   Chicken, Noodle and Grape Salad with sliced tomatoes and cucumbers

 

Thursday:  Fish Tacos and Red Cabbage Slaw and melon

 

Friday:  Chicken Marsala over “Riced” Cauliflower and spinach salad with Dairy Free Ranch Dressing (left over from Tuesday)

 

For the freezer:   Make a double batch of Chicken Marsala, one batch for dinner and one for the freezer.  While eating dinner allow second batch to cool.  After dinner package in a freezer-safe container removing as much air as possible, then seal, label and freeze.

What is everyone serving up this week?
Amanda at Gluten Free Detroit Metro is dishing up delicious things this week, like Crockpot Cabbage Rolls, Pasta and Meat Sauce,  Carbonara Pasta, Cabbage Stew, Shepherd’s (Crustless) Pie, and the awesomeness of a “fend for yourself night.”  🙂  Several things on her menu look just perfect to feed my family.  Yum!

Melissa at Mom’s Plans has lots of quick, slow cooker meals this week, and you all know how I love using a slow cooker to get dinner on the table.  Woo-hoo!  This week she is dishing up Chicken Apple Sausage Soup with KaleTomato, Beef and Green Pepper Stir Fry, Beef Tacos, Stuenkel Stew, and Traditional Minestrone .  Sounds delicious!

Heather at Celiac Family, has some fab things on here menu this week, like Gluten-Free Pizza Dogs with Zucchini Salad, Chicken Tacos, Pizza with Strawberry Spinach Salad, Teriyaki Chicken Tenders, and Easy Garlic Shrimp Pasta with Zucchini.  Be sure to drop Heather a line if you would like to host the Gluten Free Menu Swap.  She would love to hear from you!

Elisabeth from The Girl Who Couldn’t Eat Anything posted a pic on her menu of Raw, Vegan Vanilla Chia Seed Pudding that rocked my world.  I have it on my list for a fun weekend treat to make SOON!  Mmmmm….  This week she’ll be serving Shrimp and Corn quesadillas, Spaghetti and meatball bake (using lentil meatballs for her), Paleo pancakes, Grilled cheese, Dijon Broccoli rice bowl from “Happy Herbivore”, Potato Chip Fish with remoulade sauce and rice pilaf, and Pizza with salad.
